Homemade Root Beer Float Popsicles

Root Beer Float Popsicles are the epitome of summer. Combining two favorite flavors like vanilla ice cream and root beer is a classic combination. Freeze it for the ultimate summer treat!

This recipe took me right back to wonderful memories of my childhood. Every Sunday after church, my family would take our glass jug back to the A&W drive-in and have it refilled.

Then we would take it home and make literally the BEST Root Beer floats imaginable.

Root beer is such a treat in the summer. It tastes SO yummy on a hot day and enjoying a root beer float sends me back to those days as a kid. My kids love root beer floats as much as I do too!

The weather has been incredibly hot lately, so I decided to try turning a root beer float into homemade root Beer Float Popsicles.

I couldn’t be happier with the results! Look how fun they are!

Ingredients Needed For Homemade Root Beer Float Popsicles

  • Vanilla Ice Cream – Vanilla Ice Cream is most commonly used in floats
  • Root Beer – choose your favorite brand of root beer
  • Popsicle Molds – these are my favorite (different than the ones I used in the pictures) because they make adding the sticks and pulling the popsicles out of the molds EASY.

How to Make Root Beer Float Popsicles

The process for making these ridiculously good popsicles is simple! Just follow these 4 steps:

Step 1

Melt the ice cream in the microwave for 1 minute, melting just enough to melt the ice cream. Stir, making sure the ice cream is melted but still cold.

Step 2

Fill each popsicle mold with 3 – 4 tsp (20 – 25 grams). Place the molds into the freezer for 2 hours, until frozen.

Step 3

Pouring slowly, add root beer to each of the popsicle molds. The soda will fizz so take your time and remove fizz with a spoon if needed.

Step 4

Put a popsicle stick in each mold then freeze for 4 – 6 hours until frozen.

Root Beer Float Popsicles Recipe Notes And Tips

  • Carbonated sodas are the key to the frothy, creaminess in an ice cream float.
  • Diet soda will work just as well as the regular brand, so this may help save a few calories, if that’s your thing. 😉
  • Frozen yogurt or sherbet will work in place of ice cream for a fun change of pace.

What happens to the ice cream when you add the root beer?

When carbonated beverages come into contact with the ice cream, carbon dioxide bubbles are released. The soda helps free air bubbles trapped in the ice cream.

It will definitely fizz, so that’s why it’s important to take your time as you add the soda to the popsicle molds.

What is the best kind of vanilla ice cream to use?

We all have our own preferred brands and there are so many variations of vanilla ice cream in the stores.

With that being said, I would suggest a good quality vanilla ice cream but use what works best for you. I personally like using a good vanilla bean, like Breyers or Aldeens.

What is the best kind of root beer to use?

There are so many brands of root beer out there so your preference is usually the best choice! I’m a Barq’s or A&W fan, personally!

How do I know if I have melted the ice cream enough in the microwave?

Start with the 1 minute that is suggested in the recipe instructions. If you feel like it needs a bit longer, I would suggest additional increments of 20 seconds at a time until the ice cream is creamy and soft but not liquidy.

Root Beer Float Popsicles

Delicious frozen treats that contain all the classic flavors of summertime. Make root beer float popsicles with just 2 ingredients - they'll be a hit!

Ingredients

  • 2 1/2 cups vanilla ice cream
  • 4 cups root beer

Instructions

  1. Heat ice cream in the microwave for 1 minute just to make the ice cream soften. It should get soft but still be cold.
  2. Put 3 - 4 tsp of soft ice cream into each popsicle mold. Place molds in the freezer for 2 hours, until frozen.
  3. Slowly pour root beer into popsicle molds. The soda will fizz, so use a spoon to help reduce the fizz if needed. Repeat until all molds are filled.
  4. Place popsicle stick in the molds and freeze for 4 - 6 hours.
