Tools for Instant Pot Cheesecake Recipe

  • Instant Pot Electric Pressure Cooker
  • Hand Mixer
  • Silicone Spatula
  • Silicone Egg Bites Mold – Egg bite molds are one of the best accessories for your Instant Pot! You can use them for making breakfast bites, muffins, and other recipes with individual-size portions.
  • Bakeware sling – I use this Instant Pot accessory almost daily. Your pot likely came with a steamer rack trivet, but this sling acts as both a trivet and a handy way to lower and raise food into and out of the pot.

Tip: If you didn't know, Instant Pot sealing rings hold odors extremely well. If you don't want your turtle cheesecake bites to taste like last night's buffalo meatballs (I promise, you don't!),

I recommend buying a few extra color-coded sealing rings so that your food tastes exactly the way you want it to.

Making Turtle Cheesecake

Turtle Cheesecake looks gorgeous as so much more complicated than it is to make. And it tastes even better than it looks!

Cheesecake made in the pressure cooker cooks very quickly but, more importantly, stays perfectly moist.

How to Make a Turtle Cheesecake

Follow these step-by-step instructions and before you know it, you'll have some killer mini cheesecake bites to serve!

Caramel

  1. Remove the label from the condensed milk can. Open the lid, remove, and cover with aluminum foil.
  2. Place the can on the trivet. Pour enough water in the instant pot so it covers 3/4 of the outside of the can.
  3. Set to High Pressure for 35 minutes. It will take about 30 minutes to come to pressure due to the amount of water.
  4. Once the time is complete, carefully remove the can with tongs, and transfer to a cooling rack.

Crust

  1. Mix together all the ingredients for the crust.
  2. Lightly grease with cooking spray your egg molds. Place 1 tbsp graham cracker crust at the moment. Make sure to press down or they will fall apart in the removing from the mold process.

Chocolate Ganache

  1. Place the milk and chips in the microwave for about 1 minute. Mix well. Place in the microwave longer to melt if needed.
  2. Place 1 tbsp of the chocolate ganache in the mold on top of the graham cracker crust.

Cheesecake

  1. In a large bowl, beat together the brown sugar, flour and the cream cheese.
  2. Add in the vanilla extract and sour cream. Mix well.
  3. Followed by this, add one egg at a time while continuing to mix.
  4. Pour the cheesecake mix in the egg mold over the chocolate. Don’t overfill so the aluminum doesn’t get stuck to the cheesecake.
  5. Cover the egg molds with aluminum foil.
  6. Add 1 1/2 cups of water to the instant pot. Place the trivet inside the pot. Place the egg molds inside your pot (the egg molds will stack one on top of another.).
  7. Lock and seal your lid. Close your sealing valve.
  8. Set Instant Pot to High Pressure for 5 minutes. Allow for natural release for 10 minutes.
  9. Remove the egg molds, and transfer to a cooling rack. Allow it to cool, and then transfer to the refrigerator. Let it cool in the fridge for at least 4 hours before popping out of the molds.
  10. Drizzle the chocolate sauce over the bites, followed by the caramel sauce. Top with chopped pecans.
  11. Enjoy!

Tip: To remove the Instant Pot cheesecake bites from the egg bite mold, run a butter knife or small spatula around the edges of each cup. Then, push the bottom of the mold upwards to pop the mini cheesecakes out of the mold.

Instant Pot Turtle Cheesecake FAQs

You've got questions, I have the answers! Here are the most common questions I get and their answers. If you want to ask something else, simply leave your question in the comments section below!

How to Store Your Cheesecake Bites

Any leftovers should be refrigerated and will stay good for up to 3 days.

How to Make Gluten-Free Cheesecake

This Turtle Cheesecake Bites recipe is SUPER simple to make it gluten-free.

All you need to do is substitute your favorite gluten-free cookie (such as Oreo cookies or graham cracker equivalent) for the graham cracker crust in the crust.

Variations – Toppings and Flavors

While this cheesecake bites recipe is AWESOME in turtle form, sometimes you just need a change, right? You can easily make these variations when you want a little something different.

  • Top with pie fillings: You can top these bites with any pie filling you like. Cherry is popular. Don't forget to omit the chocolate ganache (although leaving it in there could be tasty)
  • fresh fruit
  • sauteed apples with caramel sauce (eliminate the chocolate ganache)
  • swirl caramel sauce in the batter before pressure cooking to add even more caramel-y goodness
  • Change up the cookies you use to make the crust (Oreos, gingersnaps, etc.)
  • Made a strawberry sauce by putting a 16 oz tub of sweetened sliced strawberries in a sauce pan mixed in 1 tbsp cornstarch heated to thickened. (omit the chocolate ganache – or not!)

Tip – How to Cool Before Chilling

It's important to cool the cheesecake fully after baking. Once it's cooled, place it in the fridge to chill. The cheesecake will be best if you let it chill overnight. I recommend planning ahead!

Instant Pot Mini Cheesecake Bites – Final Thoughts

The buttery graham crust combined with rich chocolate and creamy cheesecake center makes this one of the best cheesecakes – heck, one of the best desserts I’ve ever had!
