8 Deliciously Quick and Easy One Pot Meals

One pot meals are wholesome!

Don’t want to spend long hours in the kitchen but the craving for homemade food? Toss all your favourite ingredients in a pot and see the magic of your hand. One pot recipes are a no-stress and no-mess way of cooking and ideal for lazy Sunday afternoons when you don’t want to do the elaborate cooking. Even the students can try their hands on quick and easy one pot meals. I cook one pot meals quite regularly with rice or noodles, vegetables or chicken or pulses and try to make it healthy and wholesome. Try out my selection of some of the best one-pot meals from different parts of the world.

8 Quick and easy one pot meals one should try!

Student Chicken Biryani

Delicious!

Ingredients-

  • Cooked Rice- 4 cup,
  • Boneless Chicken- 400 grams (cut into tikka size)
  • onion- 2 large finely chopped
  • Tomatoes puree- 4 tbsp
  • Curd- 1 cup
  • Ginger and garlic paste- 2tbsp
  • Green chilies- 2
  • Coriander powder- 2 tbsp
  • Cumin powder- ½ tsp
  • Turmeric powder- ½ tsp
  • Red chilli powder- 1 tsp
  • Biryani masala -1 tbsp
  • Garam masala powder- ½ tsp
  • Cumin seed – 1/s tsp
  • Salt to taste
  • Ghee or oil- 3 tbsp
  • Coriander leaves chopped
  • lemon juice-2 tsp

Method Of Preparation- Marinate the chicken with ginger and garlic paste, salt, curd and all the dry masala except biryani and garam masala. In a heavy bottomed pan, heat ghee or oil and add cumin to it. Now add the onion and fry until golden brown. Pour in the tomato puree and fry till oil separates. Add the marinated chicken, fry and cook it almost done. Now add the biryani masala and garam masala and fry till oil separates. Add little water and cook. Now add the cooked rice, lemon juice, coriander and cover. Let it cook for 5-7 minutes on a very slow flame. Open, mix and serve with your choice of raita.

Veg and soya Pulao

Veggies are yum…….

Ingredients-

  • Rice-2 cup
  • Boiled Soya nuggets- 1 cup
  • Mix vegetable of your choice (like beans, carrot, peas, cauliflower) – 1 cup
  • Onion- 2 large finely chopped
  • Tomato paste- 4 tbsp
  • Curd- 1 cup
  • Ginger and Garlic paste- 2tbsp
  • Coriander powder- 2 tbsp
  • Cumin powder- ½ tsp
  • Turmeric powder- ½ tsp
  • Red chilli powder- 1 tsp
  • Garam masala powder- ½ tsp
  • Cardamom- 2
  • Bayleaf- 1
  • Cnnamon stick- small one inch
  • Cumin seed – 1/s tsp
  • Salt to taste
  • Ghee or oil- 3 tbsp
  • Water- 4 cups

Method Of Preparation– In a pot, heat oil and add cumin,bayleaf, cardamom, and cinnamon. Now fry onions till brown add dry masala and tomato paste and fry until oil separated. Add the soya nuggets and vegetables and fry for few minutes. Now add the rice and water, salt and cook on medium heat till done. Soya not only makes this one pot meal healthy but it also enhances the taste of the whole dish.

Cheesy Spaghetti Bowl

Cooking made simple!

Ingredients-

  • Boiled spaghetti for 2 people
  • Broccoli- 5-6 florets
  • Carrots- 2 tbsp diced
  • Red and yellow bell peppers diced- 2 tbsp
  • Onion- 1 finely chopped
  • Tomato puree- 1 cup
  • Garlic- 8-10 crushed
  • Red chili flakes- 1 tsp
  • Mixed herbs- 1 tsp
  • Cheese cubes- 2 grated
  • Cream or milk 2 tbsp
  • Salt to taste
  • Black pepper powder- 1tsp
  • Oil or butter- 2 tsp

Method Of Preparation– In a pot, heat oil or butter and garlic. Now add the onion and cook until translucent and add tomato puree and cook. When the tomato is almost cooked, add vegetables and salt. Cook for few minutes. Add all the herbs and spices, mix it well. Now pour the spaghetti in the sauce and add cream and cheese. Serve hot.

Mexican style corn rice

Cook all your favourite ingredients in single pot

Ingredients-

  • Rice – 1 cup
  • Corn kernels- 4 tbsp.
  • Carrots chopped- 2 tbsp.
  • Bell peppers and capsicum finely chopped- 4 tbsp.
  • Cumin powder- 1 tsp
  • Chilli flakes- 1/s tsp
  • Salt to taste
  • Onion- 1 finely chopped
  • Tomatoes chopped (boiled and deseeded) – 4 large
  • Bay leaf- 1
  • Crushed Garlic- 2 tsp
  • Oil – 2tbs
  • Water- 2 cups

Method Of Preparation– In a pot, heat oil and add bay leaf and garlic. Now add onions and sauté for few minutes and add corn, vegetables. Fry and pour the tomatoes and spices and cook. Add the rice, salt, and water and cook till done.

Chilli chicken Noodles

Every one loves noodles

Ingredients-

  • Boiled noodles for two people
  • Capsicum- 1 diced
  • Onion- 1 diced
  • Green chilies- 1 chopped
  • Boneless chicken diced- 1 cup
  • Ginger Garlic paste- 2 tbsp.
  • Soya Sauce- 1 tsp
  • Chilli sauce- 1 tsp
  • Salt to taste
  • Tomato ketchup- 1 tbsp.
  • Vinegar- ½ tsp
  • Chilli flakes – ½ tsp
  • Spring onions chopped- 2 tbsp.
  • Oil -3 tbsp.

Method- Marinate chicken with 1 Tbsp ginger garlic paste, chili flakes,½ tsp soya sauce, and salt. Heat oil in a pan and add ginger garlic paste, green chillis, and onion. Fry in high flame. Now add the chicken and cook it for a while. Add the capsicum and salt and cook for few minutes. Add tomato ketchup, vinegar, chili sauce and fry. Now add the Noodles and spring onions and fry. Serve hot.

Thai Chicken Rice

Ingredients

  • Cooked rice- 2 cups
  • Boneless chicken cut into bite size pieces- 200 grams
  • Thai red curry paste (easily available in stores)- 2 tbsp.
  • Oil – 2 tbs.
  • Onion chopped- 1
  • Ginger garlic paste- 1 tbsp.
  • Soya sauce- 1 tsp
  • Spring onions chopped- 2 tbsp.

Method Of Preparation– Heat oil in a pot add ginger garlic paste and onion. Fry till onion is brown add the chicken fry for few minutes. Add the red Thai curry paste and cook until done. Now add the cooked rice and fry. Sprinkle spring onions and serve. This is one of the quick and easy one-pot meals, and my favorite too.

Chana Dal Pulao

Eat healthy!

Ingredients-

  • Rice-2 cup
  • Soaked chana dal- 1/2 cup
  • Carrot finely chopped- 2 tbsp.
  • French beans finely chopped- 2 tbsp.
  • Onion- 2 large finely chopped
  • Tomato paste- 4 tbsp.
  • Curd- 1 cup
  • Ginger and garlic paste- 2tbsp.
  • Coriander powder- 2 tbsp.
  • Cumin powder- ½ tsp
  • Turmeric powder- ½ tsp
  • Red chilli powder- 1 tsp
  • Garam masala powder- ½ tsp
  • Cardamom- 2, bay leaf – 1
  • Cinnamon stick- small one inch
  • Cumin seed – 1/s tsp
  • Salt to taste
  • Ghee or oil- 3 tbsp.
  • Water- 4 cups

Method Of Preparation– In a pot heat oil and add cumin,bayleaf, cardamom, and cinnamon. Now fry onions till brown add dry masala and tomato paste and chana dal, fry till oil separated. Add carrot and beans and fry for few minutes. Now add the rice, water, salt and cook on medium heat till done. Want to make one pot meal healthy, this recipe is perfect for you.

Spicy Prawn hot pot

Mouthwatering!

Ingredients-

  • Cooked Rice- 4 cup
  • Prawn- 400 grams
  • Lemon juice- 1tbsp
  • Onion- 2 large finely chopped
  • Curd- 1/2cup
  • Ginger and garlic paste- 2tbsp.
  • Green chillies- 2
  • Coriander powder- 2 tbsp.
  • Cumin powder- ½ tsp
  • Turmeric powder- ½ tsp
  • Red chilli powder- 1 tsp
  • Garam masala powder- ½ tsp
  • Cumin seed – 1/s tsp
  • Salt to taste
  • Ghee or oil- 3 tbsp.
  • Coriander leaves chopped- 2 tbsp.

Method Of Preparation– Marinate prawn with lemon juice, ginger garlic paste, salt, curd and all the dry masala garam masala. In a heavy bottomed heat ghee or oil, add cumin to it. Now add the onion and fry till golden brown. Add the marinated prawn and fry. Cook, it almost done. Now add the garam masala and fry for few seconds. Now add the cooked rice, coriander and cover and let it cook for 5-7 minutes on a very slow flame.
