The scared, holistic and blessings seeking festival, Eid al-Adha has come to give us a reason for celebration. Also known as Festival of Sacrifice, this is considered as the holier of the two. People across the world celebrate Eid al-Adha with full enthusiasm and jubilant spirit. Customs may be different in different countries but the varieties in food and deserts remain the same. People usually look for recipes for Eid al-Adha to enjoy the festival at its best.
This Sacrifice Feast starts with early Morning Prayer and seeking blessings and lasts for three days. The enjoyment and merrymaking is on hype throughout the period. And where merrymaking is talking about, discussing delicious recipes is obvious. People used to have their common recipes for this special day. Sweet-dish Recipes for Eid al-Adha
Mixed Fruits Phirnee
Ingredients:
4 cups milk
½ cup rice flour
2 Tbsp almonds finely chopped
2 Tbsp pistachios finely chopped
2 Green cardamoms powdered
one cup sugar
½ cup Mixed Fruits diced

Recipe:
Boil the milk in a pan first, then put it on simmer. Add the rice flour. Cook while stirring continuously so as to prevent any lump. After it starts thickening, add sugar and continue stirring. Cook until it becomes thick properly. Now mix the chopped dry fruits with it.
Pour that thick mixture into small serving bowls. Garnish with chopped dry fruits and crushed cardamom.
Apple Kheer
Ingredients:
Grated apple- 1 ½ cup
Full cream milk- 6 cups
Sugar- 1 cup
Raisins- 2tbsp
Cardamom powder- ½ teaspoon
Few kesar strands
1 teaspoon of rose water

Recipe:
Mix the saffron strands well in 1 tbsp of warm water in a cup and set aside for a while.
Add apples, half of the mentioned sugar and a little water in a deep pan. Cook well on a medium flame for about 10 minutes, while stirring occasionally. Set it aside.
In another deep pan boil the milk, cook on a medium flame for half an hour or until the milk reduces half its quantity. Then add the left sugar and raisins, mix well and cook on a medium flame for 1 to 2 minutes. Stirring time to time as required.
Add the apple-sugar mixture, saffron-water mixture, cardamom powder, rose water and mix well. Turn off the flame and keep it cool. Then after refrigerating for at least one hour, serve chilled. Garnish with any dry fruits you like.
Tasty Bread Burfi
2 cups of fresh white bread crumbs. Use 4-5 slices of bread
3 tablespoons pure ghee
1 cup sugar
¼ teaspoon cardamom powdered
1 cup milk
½ cup crushed almonds

Recipe:
Make the bread crumbs without removing edges of bread slices. Then dry roast the bread crumbs over medium heat in a frying pan. Stirring continuously till it turns crunchy and light golden in color.
Sprinkle sugar and keep roasting. Sugar will be browned with bread crumbs.
Add cardamom powder and milk. Saute for few minutes stirring continuously until the mixture turns to the texture of the soft dough.
Add ghee and roast the mix with it for another 1-2 minute. Cook until it starts leaving edges. Add almonds and mix well. Remove it from heat, let it cool for a while and then pour it over a greased plate. Cut in any shape you like, whether diamond or square. It will stay for almost a month if you refrigerate it.

Delicious Malpua
Ingredients:
Milk- 1 ltr
Sugar- 3 cups
Saffron- few strands
Fennel (sauf)
Ghee- to deep fry
Flour/maida- 3 cups
1 teaspoon pistachio

Recipe:
Boil milk in a deep pan till it is reduced to its half quantity and reaches a coating consistency.
Make a thick sugar-syrup with the 2/3 of the mentioned sugar. Dissolve saffron in a teaspoon of hot milk. Add it to the sugar syrup.
Cool the reduced milk then add refined flour and remaining sugar. Mix well to make a batter of pouring consistency. Add a little milk if required. Set it aside for three hours.
Heat ghee in a wide kadhai. Pour the batter with a big spoon to form a pancake. Cook it both the sides. When properly done, drain it and immerse into the warm sugar syrup. Serve it warm sprinkling crushed pistachio on it.
Seviyaan Burfi
Ingredients:
250 gm vermicelli (seviyan)
1 1/2 cup sugar
1 cups Milk
1 cup sweetened condensed milk
1 tsp cardamom (powdered)
1 cup raisins
1 cup almonds (finely chopped)
2 cups ghee

Recipe:
Heat the ghee in a large thick bottomed kadhai. Add the vermicelli and saute till it gets slightly brown. Add one cup milk and let it evaporate. Cook until it gets soaked properly. Keep stirring the mixture until the vermicelli turns soft. Pour in the sweetened condensed milk and lower the heat to medium. Now mix in the sweetened condensed milk. Keep stirring until the mixture becomes sticky. Allow the vermicelli to cool for 15-20 minutes.
Pour it in a greased plate. After drying completely, cut pieces in any shape you like. Enjoy the burfi.
