Wild is not a word usually associated with Singapore and we do not yet have Rockets made in Singapore (only satellites). However, we have Wild Rocket – a made in Singapore restaurant that has been listed in Asia’s 50 Best Restaurants 2016. Tucked away in serene Mt Emily, Wild Rocket serves Modern Singaporean cuisine or “Mod Sin”, a term coined by Chef Owner Willin Low. Besides the Singaporean chef and cuisine, Wild Rocket has many other elements that bear the made-in-Singapore tag. Singaporean designers and artisans are responsible for Wild Rocket’s interior design, pendant lights, staff uniform, tableware and custom-built tables.
Wild Rocket is located on the ground floor of Hangout @ Mt Emily, a cool no frills hotel. The new decor of Wild Rocket is inspired by the traditional Japanese teahouse with the functional and decorative wooden carapace featuring prominently. The space is attractive, bright and welcoming and provides a sense of serene exclusivity.
Lawyer-turn-chef Willin Low and his Mod Sin dishes made headlines many years back. Wild Rocket continues to serve Singapore food with imaginative contemporary twists. The signature laksa pesto linguine is still on the menu together with items like chilli crab pasta and iberico pork char siew. The restaurant offers a Omakase Menu ($80 to $120) as well as set menus and a la carte menu. Pictures of the a la carte menu and set lunch menu are below.
We went to Wild Rocket for lunch and picked various items from the set lunch menu ($35 per person plus extras for certain items). Almost all the items of the set lunch was beautifully presented.
The Tom Yam Clams were nice but there was hardly any hint of the traditional Thai tom yam taste. It somehow reminded us of satay bee hoon (very Singaporean in a way).
The Soft Shell Chilli Crab was very nice. The sauce was really like the typical Singapore chilli crab sauce.
The most visually interesting dish was the Giam Chye Duck Consomme. A few colourful bits was served and the salted vegetable duck soup was poured onto the dish before us at the table. The soup did taste like home cooked gaim chye tng that mum used to make.
The Beef Short Ribs were tender and delicious. The portion was small but, nevertheless, well worth the extra $8 top up for the item.
The dish of the day was the soy sauce pork ragout rigatoni. The pork was tasty and tender and true to the taste of traditional soy sauce braised pork. The ingredients combined well to produce a most interesting dish.
The aglio olio pasta with tiger prawns was quite disappointing. The pasta was a tad dry and overall the taste was quite ordinary.
The most photogenic dish was the baked otak coated flounder. The fish was nicely cooked and had a good clean taste. However, we felt the otak taste was a bit overpowering.
All the desserts we tried were enjoyable. The classic Wild Rocket deconstructed cheesecake was fine though we could not figure out the Singaporean element in that item. The puree of black sesame combined well with the ice cream – a smooth tasty dessert. The teh tarik panna cotta really did have the taste of the sarabat stall teh tarik – aromatic and slightly bitter.
Overall, we thought that the set lunch at Wild Rocket was interesting. The setting was nice and the service was excellent. The visual presentation of the food was commendable and the food was generally good. Wild Rocket deserves its place among Asia’s 50 Best Restaurants 2016.
