How To Cook Steak

Cooking Steak may seem simple, but it is one of the hardest dishes to get perfect. However, it is one of the best when it is cooked just right. If you want to impress when you cook steak, follow these handy tips.

Pick you steak

Before you ca cook steak, you have to choose the right one. This is very much down to personal preference.

  • Rib eye steaks come from the rib area, and have a very rich, tender flavour. Sirloin comes from the middle. As a result it has quite a lot of fat running through it, making it very tender.
  • Fillet steak is the most lean, with a low fat content. This is also one of the most expensive cuts. Onglet steak comes from close to the liver, which gives it an offal flavour.
  • Bavette steak comes from the side of the cow, which has a lot of muscle, It can be chewy but has a strong flavour.
  • Flat iron steak works best with a marinade. This comes from the shoulder, and is a very versatile cut. Prime rib comes from the back, and is a very tender, flavourful steak.

Before you start cooking

Once you have chosen your steak, it is time to prepare it. Take the steak out of the fridge about an hour before cooking. This will allow it to come to room temperature, which will make it easier to cook evenly. If you cook steak straight from the fridge the heat will not penetrate the middle and you may burn the outside before the middle is cooked.

Just before cooking, rub a little salt and pepper into both sides of the steak. You should also ensure the pan has plenty of olive oil in it, and it is brought up to a high temperature. Putting a steak into a cold pan means it will soak up the oil and can make the meat contract.

Cooking the steak

The pan should sizzle when you put the steak in. For a medium rare steak, cook the steak for about four minutes, turning every minute. This will ensure the steak is cooked evenly.It also allows the outside of the steak to caramalise, which gives the outside a delicious crunch. After cooking, let the steak rest for about three minutes, or it can bleed out. Serve with salad and fries and enjoy.
