Noom or Low-calorie Salmon Croquettes

I can’t tell you how much I am enjoying Noom. As an older woman trying to lose weight, nothing is worse than always depriving myself of what I enjoy eating. Hey, clearly, I understand I can’t eat the decadent stuff ALL the time, but I DO need it “sometimes.” Fortunately, Noom is letting me “live my life “ and proving to be a very lifestyle-friendly way for me to lose weight.

For instance, if I have a bad food day like I did yesterday, I’m finding it easier to recoup and redirect myself. Getting back on track is super important for me and anyone else trying to manage their weight and health.

Usually, after a bad day, I would spiral out of control like a mad woman! 

One blunder was like permission to go crazy. In fact, I think I used to hear Prince’s song “Let’s Go Crazy” playing in my head while devouring an entire package of Oreos in one sitting! Not really, but one bad decision often led me down a road of bad eating for days…or even weeks. 

See, what’s happening is the Noom classes are helping me understand my patterns and why I do some of the things I do.

I’m finding this super helpful in weight loss, but other areas of my life as well.

Being an “all or nothing” person has not served me well in my eating. Thankfully, Noom really is helping me to find the “middle ground” and even understand myself better too. 

Hence, the whole point of this recipe.

Well, all that said, today I had a craving for Salmon Croquettes. You know what I mean, the kind your mom used to make (if she knew how to cook). My mom made them succulent and flavorful inside while being crispy on the outside.

As a kid of the 70s, I enjoyed mine with ketchup. The best news is the low-cal, low carb way I made them today, meant I could still have my ketchup! Yayuh!

Swaps …that’s where it’s at.

I’m learning, how to substitute the high carb yucky stuff for low-carb yummy stuff. For example, instead of the traditional breadcrumbs in my salmon croquettes, are used a half a cup of almond flour. I didn’t miss the breadcrumbs at all. Back in the day, folks used bread crumbs simply as filler. They were trying to make the dish go further and feed more hungry little mouths. Not needed in my life these days. So, I am figuring out how to make logical substitutions.

Since I’m 4 pounds down since starting Noom last month, I’d say it’s working just fine.

You know what else would have worked?

I could’ve used Sara Lee 45 cal bread! Simply toast it and crush it up in your food processor. The best thing about this bread is it is Green on Noom. Substitutions, that’s the way to go, Sporty!

Just listen to them. Beautiful, right?

Ready for my “Not Red” Noom salmon croquettes? 

Salmon Croquettes- lightened up and with lower calories

  • 15 ounces salmon
  • 1/2 cup almond flour
  • 1 egg 
  • 1 egg white
  • 3 tablespoons of onions, minced finely
  • 1 1/2 teaspoon dried dill
  • 1 1/2 garlic powder
  • 1 teaspoon salt substitute (if your watching your salt intake, otherwise season to taste)
  • 1/2 teaspoon pepper
  • 1 tablespoon olive oil, for frying
  • 1 cast iron skillet
  1. Heat oil in skillet over medium heat.
  2. Go through your salmon with your fingers to make sure you have removed the gristle and bones.
  3. In a large bowl, combine all ingredients except for the eggs and the oil.
  4. Stir well to combine. Taste and check for seasonings to make sure they are exactly as you want them.
  5. Use an ice cream scoop or a spoon to scoop mixture and form a ball. Flatten into a patty.
  6. Add patties to hot skillet. No overcrowding allowed. Social distance the patties so you can turn them easily.
  7. Cook until golden brown on each side. Usually about 4 minutes per side. 

I really hope you enjoy it. Again, the key is substituting bad stuff for the good stuff. Good stuff includes onions, seasonings, etc.
