Corn Salad – Green on Noom

Don’t you just love a good, flavorful Corn Salad recipe? I know I do. Well, I just love corn however it comes into my dreary, little life. That’s one of the reasons I made this fresh, light corn salad on a hot summer’s day. I think it’s my favorite vegetable. Since I’m still in the weight-loss adventure call Noom, I’m no longer trying to count points. Instead of points as I did on WW, I’m trying to eat more the plan’s “Green” foods. Just so you know, Noom considers whole foods – like corn, tomatoes, herbs, and all things “veggie” – Green. Green means you can eat as much of it as you’d like. Yayuh! I guess within reason. Too much fruit (with its sugar) could work against you on any plan you’re on. Moderation is key. Anyway, read on to see what’s in this low calorie corn salad that’s good on ANY plan!

Corn salad is a yummy mixture of protein, acidic flavors as well as natural sweetness. It’s heavy on flavor and low on the bad stuff.

Love potatoes…in moderation, that is.

Guess what! Potatoes are Green too! Just as with fruit, common sense tells me I can’t eat them all the time but I do indulge and it’s freeing! Such liberty!

In order to stay on plan, I find myself always trying to create meals and things that are Noom “green” or what would be zero points on WW – Blue.

I admit I miss my WW coach so much, but I’m digging this new way of eating and thinking about food. Best part is it’s working. My pjs are smaller, my jeans looser and my confidence is soaring.

Now, for my corn salad recipe

This corn salad is super easy and extraordinarily delish to boot!. It also has just enough protein to fill me up – that’s important. I love salads like this – filling and tasty. Even though many salads were “free” on WW, I never indulged much because I was always hungry after…even with some chicken thrown in there.

On the other hand, gimme a chunky veggie salad with beans and you’re cookin’ with Crisco! In other words, I’ll eat a corn salad faster than you can say “register to vote!” By the way, make sure you do vote. It’s important.

Truthfully, WW gave me such a great foundation and equipped me in ways that make Noom doable for me. Hmmm…I’m talking about a lot about WW, aren’t I? Oh well…what can I say?

Yeah, WW is still in my system – like an old boyfriend I don’t want to marry, but just date. As I think about it, I used that same analogy in my “Noom for people over 40” post.

Anty-waaaaay….

Ingredients

  • 2 ears of corn, shaved from the cob
  • 1 teaspoon lime juice (optional)
  • 3 tablespoons cilantro, chopped
  • 1 cup cherry tomatoes, halved or quartered
  • 2 tablespoons extra virgin olive oil
  • 2 tablespoons apple cider vinegar
  • 1 jalapeno, chopped (remove the ribs for a less spicy kick)
  • 1/2 cup black beans
  • 1/2 teaspoon oregano
  • 1/4 teaspoon of Lankato monkfruit (optional)
  • Salt and pepper to taste

Instructions for my yummy Green Corn Salad

  • Cut the fresh, uncooked corn kernels from the cob and place into a large bowl.
  • Add the remaining ingredients to the bowl and stir to combine.
  • Cover and let sit for at least 15 minutes to give the flavors a chance to shake, rattle, and roll! Or in other words, for the flavors to come together.

One more way to enjoy this salad…

My sweet daughter in law asked if I’d have this salad with chips and salsa. My reply was something like “yeah when I lose ten pounds.” I was being dramatic, actually, I could. Anyone could! Live your life!

Honestly, I love this salad …just as it is…as a salad. I hope you’ll like it too!

My Progress…

By the way, I’m down 4 pounds since starting Noom twenty-two days ago. Pretty good, right? If only I could get motivated to move more. I just can’t get my “mojo” in the exercise department. I’ll keep working on it. Wish me luck!

Also, I’ve noticed I’ve lost so many more inches than pounds. Very perplexing. I found this article on the subject: ” These 8 Women Look Like They Lost Weight—but the Scale Didn’t Budge”.
