  • 1 cup besan (gram flour)

  • 1/4 tsp turmeric powder
  • 1/2 tsp cumin seeds

  • 1/4 tsp ajwain (carom seeds)
  • Salt to taste
  • Water (to make the batter)
  • Oil for cooking
  • Fresh coriander, chopped

Instruction :

  • Put besan, chopped onion, tomato, green chili, turmeric powder, cumin seeds, red chili powder, ajwain and salt in a mixing bowl. Gradually add water and whisk everything into a smooth batter. The batter should have a pourable consistency, and not be too thick or runny.
  • Heat a non-stick tawa or pan on a medium heat and add few drops of oil.
  • Pour a ladleful of batter into the pan and spread it evenly to form a thin pancake. Drizzle the edges with a little oil. Bake over a medium heat until the edges start to lift and the base is golden brown.
  • Carefully turn the chilla over and fry the other side for 2-3 minutes until golden and crispy.
  • Serve hot with chutney, ketchup, or yogurt.

Instruction :

  • Boil water in a pan, add the spinach leaves and cook for 2-3 minutes. Drain and immediately place in cold water. Blend the spinach with a green chili to a smooth puree for gravy.
  • Heat 1 tablespoon of oil or ghee in a pan. Lightly sauté paneer cubes until they are golden brown on all side. Remove it on a plate.
  • Add cumin seeds in the same pan. Once they crackle, add the chopped onions and sauté until golden brown. Add the ginger-garlic paste and cook for a minute.
  • Add the chopped tomatoes, turmeric powder, red chili powder and salt. Cook until the tomatoes soften and the oil starts separate.
  • Add the spinach puree to the pan and mix well. Leave it for 5-7 minutes. You can add a little water if the gravy is too thick.
  • Add the fried paneer cubes and garam masala to the spinach gravy. Mix well and cook for 2-3 minutes.
  • For extra creaminess, you can stir in cream or yogurt before serving and serve with roti, naan or rice.

  • Add sliced onions and fry until they turn golden brown. Add chopped tomatoes and cook until soft.
  • Add carrots, peas, beans, cauliflower and green chilies. Add turmeric powder, garam masala and salt. Stir and cook for 2-3 minutes.
  • Add the soaked rice and mix with vegetables. then add 2 cups of water, stir and wait for a boil.
  • Cover the pressure cooker with the lid and cook for 1 whistle. then takeout the pulao in a plate. Garnish with fresh coriander leaves and serve with raita or salad.
