Vietnam North to South Itinerary Help - 10 days


Based on travel times and some inflexible dates, I could use some advise or tips on my tentative itinerary for late October.Info: I'll be travelling alone and am interested in eating, going to markets, alternative type tours so I can understand the historic/cultural background but am wary of touristy organized tours, art. I'm looking to get a good mix of adventure and relaxation--definitely not the type to want to spend a whole day on the beach.Day 1 - arrive in Singapore in time for dinnerDay 2 - SingaporeDay 3 - SingaporeDay 4 - Singapore -> Hanoi (flexible, flight not booked yet. Should I do a full 3rd day here?)Day 5 - Day in Hanoi, overnight train to Sa PaDay 6-7 - Sa Pa trek (thinking about a 3-day guided trek with homestay and hotel)Day 8 - Sa Pa to HanoiDay 9-10 - Halong Bay tour (can't move--meeting a friend)Day 11 - Fly Hanoi to Da Nang and travel to Hoi An, will probably fly in the evening so I'd have time to do something in Hanoi in the morningDay 12-13 - Hoi AnDay 14 - Fly Hoi An/Da Nang to SaigonDay 15 - early morning flight home from Saigon (can't move--flight booked)Main questions:Any Sa Pa guided trek recommendations?Cooking class recommendations?Would I have time to go to Hue between Hanoi and Hoi An?
