Here's our itinerary (and some recommendations) for our Hong Kong & Macau trip via our travel agency:
Day 1 Meet & transfer to Silka Seaview Hotel.
*** Ocean Park in the after lunch for an extra $60.
Day 2 Breakfast at hotel then Hong Kong city tour : Stars Avenue, Aberdeen Fishing Village, Mid-levels of Victoria Peak , Jewellery City & Factory Outlet.
Afternoon Disneyland tour until the fireworks display.
Day 3 Breakfast at hotel, then pick up for Macau tour with lunch (approximately 9 hours) Upon arrival, sightseeing tour begins with casinos Wynn Macau, Grand Lisboa, The Venetian Macao, City of Dreams and certain World Heritage Sites including the landmark of Macau – Ruins of St. Paul's Roman Catholic Church and Senado Square after tour, transfer back to Hong Kong.
Day 4 Breakfast at hotel , free time until transfer to airport.

Note: We had a tourist guide meet us at the Macau ferry terminal to make it easier for our elderly mom, but going around the city is pretty simple with the free shuttle buses provided by the casinos that you can probably do the sightseeing on your own without much of a problem.
