This assignment requires some time to complete, so you may want to read through this during the first
week of class and familiarize yourself with the requirements. Take some time now to make sure you
understand the assignment and that you have what you need to complete it. This will be completed in 3
parts during the semester – PLEASE make note of each deadline and remember to follow instructions
for submission of materials carefully!
You will need the NutriCalc Diet Analysis software available with the purchase of your access code with
your textbook. You are not to use other meal tracker systems on the internet (i.e. MyFitnessPal,
SuperTracker, etc.) as these will not generate the sophisticated reports you will require to complete
your project. If you do this project using another software you will not receive credit for the work!
Academic dishonesty for this project like any other assignment WILL NOT BE TOLERATED – using another
student’s project, reports, or previous papers will be noted and identified – you will receive a 0 on the
entire project if academic dishonesty is noted! If you have concerns on what academic dishonesty is
please review the University policy.
Doing the assignment: during the first week of class you will need to keep a food diary for 3 days.
Instructions for keeping the diary are provided below and within the module for week 1. You will collect
food, beverage, and behavioral data in this log. You will use a provided food Record form, that is
available in the week 1 module and also in the Diet analysis tab for this record. Handwritten records are
fine, you are welcome to simply scan them later for their submission.
Once you have collected the record you will then set up a profile in the NutriCalc program. Please
review the short tutorial video provided in the Diet Analysis Project tab so you are familiar with how to
use the program and set up your profile.
After you have set up the profile you will then be able to enter the foods and beverages you consumed
over the 3 day period. Make sure to save your work as you enter the foods. Once all items have been
entered you will then use the reports to evaluate your dietary intake. Each part of the paper will require
you to use various reports to answer the listed questions. Questions will be answered in a paper
format, using APA format for citations. As you are writing this paper imagine that the reader has NO
knowledge of nutrition, you will be responsible for clearly identifying the nutrition recommendations in
your evaluation and citing the source(s).
You can use the outline provided to organize your paper(s). The process does require time however it is
straightforward. This is worth 100 points in total. You will submit project components as instructed by
the specified deadlines available on the topical schedule for the course.
This project provides you with the ability to demonstrate the cumulative knowledge you will gain related
to nutrition in an applied format.
Step 1: Collect 3 day diet record -- You will use the provided 3 day diet diary form for each day to
collect your diary for anything you eat and drink!
Here is what you need to do to complete this assignment:

 Keep a food diary for 3 days- 2 week days and 1 weekend day (consecutive days). Try to choose
days that are fairly typical of your intake so that you can better understand your usual diet. In
other words – don’t record on days that you are sick, your birthday, etc. Use the food record
sheet in the diet analysis project folder on Blackboard for your records.
a. Carry the food record with you and record everything or eat or drink (including water
and any other fluid*)
i. record immediately after eating with as much detail as possible
ii. be accurate with portion sizes - this is IMPORTANT
b. Do not include vitamin and mineral supplements since you are looking only at food
intake – you can discuss whether or not you need one later in the paper. If you take a
protein supplement or drink protein shakes, include these as they will influence calorie
and macronutrient intake – you will often need to add the protein supplement as a
custom food if you are consuming one.
c. You need to record your intake on the Diet Diary Form (1 form for each day)
i. you should be very detailed. It will be easier to do the analysis if you have kept a
good record of everything that you eat and drink.
ii. record the meal and time you ate – you decide what the meal is. If you get up
at noon on Saturday and you eat – that might be your breakfast and it might be
lunch
iii. record the food/beverage in as much detail as possible and the portion.
You do not have to record method of preparation unless it will affect the food.
For example - a pop tart is the same if it is toasted or not. But chicken is
different if it is fried or baked.
iv. Record the portion size – accurately, refer to the tools in chapter 1-2 to
better determine serving size – you will also find a handout in the diet analysis
project to estimate portion sizes
v. Record where you were, who you were with, and what you were doing when
eating. For example, you might have been alone at kitchen table reading your
nutrition book. Or you might be at work with co-workers. Or you might be with
friends watching TV
vi. Rate your hunger on scale of 1= not hungry and 5 = famished – you will
need this data later in your report to discuss hunger rating
vii. Assess how you were feeling (bored, happy, stressed, rushed, etc.)
viii. Estimate how long it took you to eat, record in minutes (again details
are needed).
 Step 2: Set up your profile in the NutriCalc program (recommended that you complete this in the
first 2 weeks of class)
