Clean Eating: It ain’t that hard!

Hi guys,

Well after a long LONG break I have decided to get back to writing!!

I have sat down a few times and thought “what can I start back with?”and after much deliberation I decided I would go with something completely different to what I have written before….. a food blog!!

Now I do like a treat from time to time but Eating Clean is something that I like to focus on for myself and with my clients. However a complaint I often get is that eating clean and healthy is boring!!!!!

Huh?? Are you kidding me??

I have decided to include one of my favorite breakfast/ snack options and something a little different for summer (if the sun comes back)

 

Paleo Pancakes

Paleo Pancakes

Ingredients:

2 bananas

2 Fresh Organic eggs

1/3 – 1/2 cup almond butter

  1. Blend all the items together.
  2. Preheat pan with coconut oil and cook as you would any other pancake!
  3. This should make 3 – 4 medium pancakes.

Paleo Lemonade

Ingredients:

6 – 8 fresh lemons

8 – 10 cups of water

Half cup of Organic unheated honey

Fresh mint leaves

  1. Mix the juice of the lemon, cup of water and honey and bring to just below the boil.
  2. Add rest of water and tear mint leaves up into mixture.
  3. Place in glass bottle and chill.

 

For an extra twist on this I left out the mint leaves but blended in a cup of fresh organic strawberries and went through the same process. Needless to say it was more than a little refreshing!!!
