Here is my favourite recipe for summer nights camping under the stars with my family… damper bread.
Kids love cooking and eating this delicious treat with lashings of strawberry jam, locally bought honey or just dipped in olive oil. Heavenly.
Damper is a basic, yeast free bread recipe made by the early colonial settlers in the Australian Bush. Due to the simplicity of the ingredients, this bread is ideal for baking over campfires.
This is how to make enough ‘dampers’ for six people:
Firstly, get the kids to forage for a few long, straight sticks to wrap the damper dough around. The sticks should be sturdy and at least double the length of your child’s arm so they can safely hold them over the embers of the fire.
Ingredients:
- 250g Plain flour
- 2 tsp. baking powder
- Pinch of salt
- 150ml water
Method:
- Combine all the ingredients and mix into a dough. Kids will enjoy kneading the dough into a ball which should then be divided into six equal portions.
- Roll each portion into a long, slightly flattened sausage shape of about 15 centimetres long.
- Wrap each piece around a stick in a spiral shape, making sure the dough is secure.
- Hold the ‘damper’ over the embers of the campfire, rotating the stick so the dough cooks evenly for about 10 minutes. The damper will become golden and bigger in size.
Adults will need to help to remove the hot bread from the stick before smothering it in salty butter, jam, syrup or whatever yummy things are on hand.
