Spanish Gazpacho

I am sure many of you are getting ready for back to school, some have already started.  My first is heading to Kindergarten and I am not sure who is more nervous.   It is a big step!

At this time you might need something healthy and quick for yourself.  This is the perfect appetizer or lunch. You can even bring it to work and drink it during lunch.

Seattle summer is still going strong and the farmers markets have some amazing tomatoes.  This soup will Taste better the more rip and sweet your tomatoes are.  I always make myself a quick gazpacho to have for lunch when it is hot.  This is delicious, creamy and garlicky and tangy.  It could not be any easier to make since you just put it all into the Vitamix.  If you don’t like it garlicky then reduce to 2 garlic gloves and taste and then add more.  The same goes with the vinegar.  You can add ½ the vinegar first and add more per your taste.

Spanish Gazpacho

Yield: 8 servings

Prep Time: 20 minutes

Ingredients:

5 garlic cloves
2 lbs of ripe sweet tomatoes (room temperature)
½ onion
1 pepper (any color will do but sweet peppers are the best)
2 English cucumbers (save one for serving)
5 tbsp red wine vinegar
¼ tsp cumin
1 tsp salt
1 tsp white pepper
½  cup olive oil
½ of Gluten Free bread crumbs or bread of your choice (optional for thickness)

Directions:

Chop all the vegetables (except one English cucumber and the bread crumbs) into chunks add into your Vitamix or food processor.  Add all the oils, vinegar, and spices.  Mix until smooth.  The smoother the better this will taste.

Add the breadcrumbs into the soup and let it sit for 10 minutes.  This will make the soup a little thicker.  It is optional step.

After 10 minutes turn on the mixer again until smooth.

Place all that into a large glass bowl.  Taste for salt, pepper or vinegar.  I like mine garlicky and tangy.

Put into the refrigerator and let cool.  The soup always tastes better the following day. If you want it even smoother you can put it back into the mixer and mix again.

Serve with chopped cucumber.
