The first time I made mini fruit pizzas it was for my sister’s baby shower four years ago. I have no idea why we haven’t made them since because they are so much fun for guests and make for a really pretty dessert.

Those large Fruit pizzas kind of intimidate me, so I’m a fan of this mini-me version. Plus the sugar Cookie recipe is one of my favorites, and that cream cheese frosting I could totally eat with a spoon.
Speaking of spoons, for uniformly-shaped cookies, make sure to use a medium cookie scoop. It makes the perfect size sugar cookies for mini fruit pizzas.

My favorite way to eat this is topped with diced strawberries, but we couldn’t resist making them a bit more festive for the 4th of July holiday by throwing in some blueberries. You can tell we had a lot of fun coming up with different ways to decorate the mini fruit pizzas.
The strawberry heart is my most favorite.

Of course you don’t have to stick with the red, white and blue theme. You can elevate them to an even classier dessert by topping them with a combination of blackberries, diced kiwi, diced strawberry and a mandarin orange slice. Or let your guests do the decorating by providing a mini fruit pizza bar!

- 2¾ cup flour
- 1 tsp baking soda
- ½ tsp baking powder
- 1 cup unsalted butter, softened
- 1½ cups sugar
- 1 egg
- 1 tsp vanilla extract
- 2 (8-oz) pkg cream cheese, softened
- ½ cup unsalted butter, softened
- 2 to 4 cups confectioner's sugar
- 1 to 2 tsp vanilla extract (to taste)
- Fresh fruit such as diced berries, blueberries, sliced bananas, diced peaches, diced kiwi or mandarin orange slices
- Preheat oven to 375 degrees.
- Combine flour, baking soda and baking powder in a small bowl; set aside.
- Cream butter and sugar together in a large bowl until light and fluffy (about 2 minutes). Beat in egg and vanilla. Gradually add dry ingredients and mix until thoroughly combined.
- Roll rounded tablespoonfuls of dough into balls and place on ungreased cookie sheet.
- Bake 8 to 10 minutes or until edges are set and lightly golden. Let stand on cookie sheet 2 minutes before moving to wire racks to cool completely.
- Cream together cream cheese and butter in a medium bowl until smooth and creamy. Add vanilla.
- Gradually add confectioner's sugar until frosting reaches desired consistency. Store in refrigerator until ready to use.
- Frost cooled cookies and top with fresh fruit. Serve immediately.
