Chocolate Smarties Pinata Cupcakes….

When I was trawling through Pinterest a couple of weeks ago looking for some Easter themed cupcakes I came across lots of pictures of amazing mini egg pinata cakes which all had hidden mini eggs in the middle so they all popped out when you went to slice it.  Over the weekend, I wanted to do some baking so when I realised I had some Smarties and some cute cupcake cases I thought I’d see if I could make some Chocolate Smarties Pinata Cupcakes….

How to make Chocolate Smarties Pinata Cupcakes.

200g Sugar
200g butter
4 eggs
A capful of vanilla essence
175g self raising flour
50g cocoa
1 packet of smarties

Chocolate buttercream to decorate.

  1. I always use an electric blender when I make cakes (lazy, I know) which makes it really easy and quick.  Basically, I beat the butter and the sugar together first, add the vanilla and the eggs and then the flour and the cocoa.
  2. Bake in the oven at about 180 c until the cake is cooked through (ie. when you can insert a skewer or knife and it comes out clean).
  3. When the cake is cooled, use a spoon to scoop out a hole in the middle of each cake.
  4. Fill the hole with Smarties and use some of the cake you removed to cover the top of the hole.
  5. Ice them however you want to and top with some more Smarties.

How easy is that for such a cute cake?

I would say that you should really only pop the Smarties in the cake and ice them at the last minute as the colour came of the Smarties a little bit as time went on – we had some leftover that we left until the following day and although they were still delicious, the colour on the Smarties was faded as the moisture of the cakes had drawn it out a bit.  If I make these again, I’ll use the mini chocolate beans that you can get in the cake decorating aisles as they’re smaller and presumably will hold their colour better.
