Alu Fry
This curry is a perfect side dish for any rice item.
- RussetPotatoes or Baking Potatoes - 2
- Small onions- 2
- Red Chilly Powder - 3 spoons
- Dry Red Chillies - 3 broken into half
- Curry leaves, Cumin Seeds, mustard seeds - for tempering
- Canola oil
- Salt - to taste
- Cut the potatoes into small cubes and soak them in water.
- Cut the onions lengthwise and halve them again
- In a deep wok - pour canola oil and let it heat through
- Add the potatoes and deep fry them and remove them when they are floating to the top. Drain them on a paper towel. Add salt and keep them aside.
- In a skillet, heat 1 spoon of oil - fry the Onions Till they are light brown with a pinch of salt.
- Now, add the potatoes, chilly powder and mix everything together.
- Adjust the salt and remove from heat.
