Curry Roasted Zucchini Fries

This delicious recipe offers a new twist on classic fries, which of course are made from potatoes. But why not make them from zucchini instead? This recipe is super healthy and extremely easy to prepare. Your children will love this as well. Regarding the spices, you can go in many different directions. Curry power works. Ras el hanout works. Plain cumin powder works. Or you could just use some dried herbs like oregano or basil. Once the Zucchini Fries are cooked, you can serve them with crumbled feta or homemade tomato catsup.

Curry Roasted Zucchini

  • 1 large or 2-3 small zucchinis
  • 1 tablespoon curry powder
  • 1 tablespoon coconut oil
  • Salt and pepper

The process…

Cut the zucchini into French fry shapes.

Toss the zucchini fries with the curry powder, salt, and pepper.

Toss with coconut oil and arrange the zucchini fries in a single layer on a baking sheet lined with parchment paper. Bake at 350°F for about 20 minutes or until zucchini is golden brown.

SERVES 2-3
