I know Halloween is a ways off but I just HAD TO go with a horror theme for this recipe. During June, we had our nieces stay with us the whole month. It was the first time I had seen them since moving from Kentucky three years ago. Needless to say, we had A LOT of catching up to do.

I decided to keep the fun going even after they went home by making this cake.

Tips For Enjoying Ice Cream Cakes!
Have you ever had an ice cream cake? It is so delicious, but you need to be careful so it doesn’t melt everywhere. Keep it frozen until you’re ready to eat it. When your friends and family are done enjoying it, make sure you stick it back in the freezer. It is total ice cream deliciousness, in the form of a cake.
Another tip for enjoying an ice cream cake is to let the cake sit out for a few minutes before enjoying. Sometimes ice cream cakes harden up pretty good in the freezer, which means they need a few minutes to thaw.
One thing you need to do right now, for National Ice Cream Month, is to enjoy an ice cream cake. You can enjoy an ice cream cake for a special occasion or just for the fun of it – like I am.

- 2cups water
- 1cup corn syruplight
- 3.5cups sugarwhite
- 1tsp cream of tartar
- 1/2cup corn syruplight
- 1tbsp cornstarch
- food coloringred and blue
- water
- 1/2cup heavy cream
- 1.5cups white chocolate chips
- red gel food coloring
- store bought ice cream cake
- In a medium saucepan, thoroughly mix all ingredients together and bring to a boil. Continue to boil until a candy thermometer reads 300 degrees.
- As soon as the temperature reads 300 degrees, quickly pour the mixture onto a metal baking sheet. Let cool completely and break into shards.
- In a heat proof bowl, heat cream for 45-60 secs or until bubbling. Pour chocolate chips into cream; immersing completely. Let sit for 2 minutes.
- Stir until combined. Heat again for 20 seconds (repeatedly if necessary) until all chips are melted and smooth. Add gel food coloring until a nice blood red color is achieved.
- In a small bowl, mix cornstarch and corn syrup together. Slowly add water until the consistency of blood is reached. Add food coloring until it is the color of blood.
