SUMMER LIME CHICKEN TENDERS | |
2 pkgs. boneless, skinless chicken tenders
1/3 c. olive oil Juice of 3 limes 4 cloves garlic, peeled and minced 3 tbsp. fresh cilantro or parsley, chopped 1/2 tsp. salt 1/2 tsp. pepper, freshly ground Trim fat from tenders. Pound between waxed paper to flatten. Combine olive oil, lime juice, garlic, cilantro, salt and pepper in a bowl. Pour over chicken and marinate 4-8 hours. Grill or broil the chicken tenders for 2 minutes on each side. Yield: 4-6.
