Munagaku Vepudu | Drumstick Leaves Stir Fry

Munagaku Vepudu is a healthy stir fry made with Drumstick Leaves with very less oil and with boiled toor dal. The toor dal adds a good protein goodness to the stir fry.

Though I have used the telugu name for this stir fry, its cooked similar way in Tamil Nadu as well. To be frank, I have only seen Amma making it, so it could be her adaption of Tamil Cuisine. However, with so many similaries in the South Indian cuisine, one can’t be very clear on certain dishes.

I have a Munagaku pappu kura, another healthy dal cooked with drumstick leaves,

2 cups Drumstick Leaves Munagaku
2 tsp Cooking Oil
1/4 cup Toor Dal    boiled
1 tsp Red Chili powder
1/4 tsp Turmeric powder
Salt to taste
4 nos    Garlic Cloves
1/2 tsp Mustard Seeds
1/2 tsp Urad Dal
Curry Leaves Handful

Remove the leaves from the stack. Wash and drain well.
Heat a nonstick pan with oil, temper with mustard seeds, urad dal, crushed garlic, curry leaves for couple of minutes.
Then add the drained drumstick leaves, combine well.
Cook on high flame for couple mins. Then add salt and turmeric powder.
Simmer and cover with a lid. Cook for 5 mins, frequenlty stirring in between.
Then add red chili powder and mix. Sprinkle little water. Cook for couple of minutes.
Finally add boiled toor dal and mix well.
Cover and cook for another 10 mins.
The leaves get cooked in its own steam.
