Eggless Oreo Chocolate Cake

Eggless Oreo Chocolate Cake is the cake I decided I should make as a special Valentine’s Cake. I took some efforts to frost it with Dark Chocolate Ganache and Oreo Biscuits. Kids were so impressed and said I should have waited for Valentine’s day to bake this cake. I said I won’t have been able to bake it on that day and hence all the dishes got done ahead.

This cake is inspired from Rajani’s cake and it got so beautifully baked. The cake was done in 30 mins time. However I baked it for another 5 mins. I should have sliced between and added some ganache along with sugar syrup. I felt I could avoid the extra sugar. However Konda said I should have. After resting overnight the cake was very soft unlike how it was little dry right away after scling through. The crushed oreo biscuits were not visible at all and the cake had a lovely dark hue after baked.

Eggless Oreo Chocolate Cake

For the Cake

1 cup flour
1/2 cup cocoa powder
3/4 cup sugar
1 tsp Baking Soda
1/2 tsp Baking Powder
A pinch of salt
1/2 cup oil
1/4 cup Milk
1/4 cup Curds /Yogurt
1 tsp Instant Coffee Powder
1/3 cup Hot Water
4 Oreo Biscuits    crumbled roughly with hands
1 tsp Vanilla Essence

For the Dark Ganache
1/2 cup Dark Chocolate Compound
1/4 cup Milk Chocolate Compound
1 cup Cream

Making the Cake
Pre heat the oven to 185C. Grease a 6″ pan with oil or butter and line with parchment paper.
In a bowl, add flour, cocoa powder, baking powder, baking soda, whisk well.
Add hot water to the instant coffee powder, mix well.
Add the hot coffee, oil, milk, curds, and vanilla. Mix using a wire whisk so that no lumps remain. If the batter is too thick, add a couple of tablespoons of milk to thin it out.
Using a spatula mix again, then add roughly crushed oreo cookies to the batter and mix well.
Transfer the batter to the greased and lined pan. Bake for about 30-40 minutes or until a skewer comes out free of crumbs when inserted in the middle of the cake.
Take the cake out of the oven, let it rest in the pan for about 5-10 minutes.

Making the Ganache
In a MW bowl, add chopped chocolate compound and fresh cream. MW for 2 mins, in interval of 1 minute. Whisk well for everything to get combined. Let it rest to get thick.

Assmembling the Cake
Once the cake is rested, pour the ganache over it, sprinkles, and oreo biscuits.
