This delightful spinach salad includes both melons. I used a spinach salad as my foundation and added cucumber with a few other ingredients. - 1 package fresh baby spinach6-ounce
- 1cup cubed seeded watermelon
- 1cup cubed cantaloupe
- 1 small cucumberpeeled and thinly sliced
- cup ½thin red onion sliceshalved
- Honey Citrus Vinaigretterecipe below
- Maple Pecans (optionalrecipe below)
- In large bowl, combine all ingredients. Toss with Honey Citrus Dressing and Maple Pecans.
- 2tablespoons honey
- 1tablespoon balsamic vinegar
- 1tablespoon canola oil
- 2tablespoons orange juice
- 1tablespoon lime juice
- salt and pepper to taste
- Dash hot sauce
- In small bowl, whisk together all ingredients.

- 1/4cup pecan halves
- 1tablespoon pure maple syrup
- Preheat oven 375 degrees. Coat baking sheet with nonstick cooking spray.
- In small bowl, combine pecans and syrup. Spread on prepared pan and bake 10 minutes or until lightly browned.
