Easy Recipes For Cancer Patients Important When Cooking For Cancer

My Simple Baked Chicken is from the chapter, Day of Chemo and this chapter includes easy-to-tolerate food when going through treatment. However, this isn’t just a food for cancer patients as this tasty chicken dish is my family favorite. It is important to avoid spicy, rich or fried food because these foods can upset your stomach.  Food is nourishment so eating healthy is important. I think my simple baked chicken recipe makes a quick dinner and it’s protein-rich!

Simple Baked Chicken from Eating Well Through Cancer

Tender chicken with gravy (tastes like chicken soup) makes a very comforting flavorsome meal. Be sure to serve with rice to soak up the last drop of gravy. This is one of my easy recipes for cancer patients that also everyone in the family enjoys.

Makes 6 servings

1 1/2 pounds chicken breast tenders                                                                                              
1/4 cup biscuit baking mix
1 tablespoon olive oil
1 teaspoon minced garlic
1 tablespoon all-purpose flour
1 (16-ounce) can low-sodium, fat-free chicken broth

1. Preheat oven 375°F. Coat 3-quart oblong baking dish with nonstick cooking spray.
2. Coat chicken in baking mix and place in prepared dish. Bake 40 minutes.
3. In small nonstick pot, combine oil and garlic, and add flour. Whisk in chicken broth, bring to boil, and cook until slightly thickened. Pour over chicken, cover with foil, and continue baking another 20-30 minutes or until chicken is done.
