Easy Crawfish Etouffee Recipe! Where to find Louisiana crawfish tails?

All of my friends at school love southern Cajun recipes. If fact, they gather around my kitchen when I am cooking my southern recipes. No one realizes how easy you can whip up my mom’s recipes. I am making my favorite Louisiana recipes in St. Louis. The Chicken and Sausage Gumbo and the etouffee recipe took very little time and are so flavorful. The only downside is that seafood is extremely expensive in St. Louis.  I miss Louisiana crawfish season in Baton Rouge and was excited to find Louisiana crawfish tails in the freezer of a grocery.  Ask your grocery where to find Louisiana crawfish tails and they are probably frozen. If you can’t find Louisiana crawfish, check the Louisiana crawfish website for crawfish tails and you can also find live crawfish for a crawfish boil.

Easy Crawfish Etouffee recipe from Holly Clegg’s trim&TERRIFIC Gulf Coast Favorites Cookbook

The key ingredients are tender Louisiana crawfish tails simmered with onion, green pepper, and garlic in a light roux. You can make this recipe in minutes. This easy-to-follow healthy crawfish etouffee recipe will top your Cajun recipe repertoire!. Start cooking the rice.

Makes 4 (1-cup) servings

2 tablespoons olive oil
3 tablespoons all-purpose flour
1 onion, chopped
1/2 cup chopped green bell pepper
1 teaspoon minced garlic
1 cup fat-free chicken broth
1 tablespoon paprika
1 pound Louisiana crawfish tails, rinsed and drained
Salt and pepper to taste
1 bunch green onions, stems only, finely chopped

1. In large nonstick skillet coated with nonstick cooking spray,heat oil and stir in flour.
2. Cook over medium heat until light brown, 5–8 minutes, stirring constantly. Add onion, green pepper, and garlic and sauté until tender, 5 minutes.
3. Gradually add chicken broth and stir until thickened. Add paprika and crawfish. Bring to boil.
4. Reduce heat, cover, cook 20–25 minutes, stirring occasionally. Season to taste and stir in green onions.

Terrific Tidbit: The browned flour and oil creates a roux.  The roux gives the etouffee that deeper color.
