Banana Lemon Muffins


My kids dig the mini muffin scene. Big time. In fact, they may have been known to polish off a double batch in one day.


Today's yumminess came with the combination of bananas and LemonOne of my favorites. After her first bite, my 5-year-old exclaimed, "Oh. my. word. These are the best Muffins EVER!" 

Mom for the win.

Banana Lemon Muffins

1/2 cup melted butter
1 Teaspoon vanilla extract
6 drops YL lemon EO*
1/3 cup coconut sugar
1/4 cup pure maple syrup
1 tablespoon vinegar
1/2 cup water
1 egg
2 cups flour
3/4 teaspoon salt
1 teaspoon baking powder

Combine wet ingredients in a large bowl and mix well. Add remaining ingredients and stir to combine. Scoop into greased or lined muffin tins and bake at 350 for 10-12 minutes for minis or 18-23 minutes for regular muffins (or until done). Enjoy!
