PMS Brownies


My apologies if the title for these morsels of deliciousness is a bit shocking for you, but let's face it. We've all been there. Even if you are male, chances are you know a few women and have noticed that there are certain times of the month that they are a bit more.....unpredictable. That said, I can think of no better way to say "I love you" on this Valentine's Day than with a super-yummy chocolate for survival. So men, these are as much for you as they are for us.

PMS Brownies

1/2 cup butter
1/2 cup coconut sugar
1/4 cup maple syrup
2 eggs
2 teaspoons vanilla extract
1/3 cup unsweetened cocoa powder
1/2 cup flour (I used Spelt)
1/4 teaspoon salt
1/4 teaspoon Baking powder
1/2 cup Chocolate chips

Combine butter, sugar, syrup, eggs and vanilla. Whisk well to Combine. Add cocoa powder, flour, salt, and baking powder. Combine well with a whisk. Add chocolate chips and combine. Pour into a greased 8x8 greased pan. Bake at 325 for 20-25 minutes (do not overbake; I used my convection oven at 325 for 13 minutes). Let cool completely. They are great at room temperature, though we prefer them cold and store them in the fridge.
