Boondi Ladoo



Boondi laddu is a delicious Indian sweet made for all special occasions. It needs only few time and ingredients to make. You can add yellow or orange to color to make it colorful instead of Turmeric Powder I used here. But turmeric powder simply gives the nice yellow color and comfortable.

Ingredients
  1. Besan flour / Gram flour-1cup
  2. Cardamom pods crushed-1/4 tsp
  3. Turmeric powder-1/4 tsp
  4. Water- ½ cup (adjust to make a smooth batter)
  5. Raisins, cashew –few
  6. Ghee-1tbsp
  7. Oil-for deep frying
  8. For sugar syrup:
  9. Sugar-1cup
  10. Water- ¾ cup
  11. Turmeric powder-a pinch
  12. Rose water-3tbsp
Preparation:
  • Firstly make the sugar syrup, for that boil water and sugar in a saucepan.
  • Stir well on medium-low flame until, it reaches to a half thread consistency (little sticky).
  • Add a pinc of turmeric powder and mix well.
  • Add rose water to the syrup and cover the lid.
  • In a bowl, mix the gram flour and turmeric powder with water and make a batter which is slightly thicker than dosa batter.
  • Heat enough oil (to deep fry) in a pan on medium-high heat.
  • Drop a pinch of batter in to the hot oil to test the temperature; if it rises soon without changing color, then the oil is ready to make boondis.
  • Now take a ladle with holes; pour the batter through the holes of it in to hot oil and shake the ladle while dropping to get small round boondis.
  • Repeat the process remaining batter, each time wipe out the batter remaining on the ladle used for boondi making (to get round shape boondi’s).
  • After frying all the boondi,s crush them well with hands still it is warm or make a pulse in blender. 
  • Add this crushed boondis in to sugar syrup.
  • Add cardamom crushed, fried raisins and cashew in to it and mix well.
  • Grease your hands often with ghee and make balls out of the boondi mixture.
  • Garnish it with nuts on top and enjoy the ladoos!
