Get Saucy: Reduce Calories With Our Chicken Teriyaki Sauce

The word Teriyaki comes from the Japanese root words teri and yaki. Teri means to shine and yaki means to broil or grill, which is exactly what you might think of when you picture traditional chicken teriyaki – a grilled piece of chicken that’s been glazed with a savory and shiny sauce.

Traditionally teriyaki sauce is a mix of soy sauce, sake and the rice wine mirin, but today many chefs and home cooks are sweetening the traditional mixture with table sugar and pineapple juice, among other additions. While these ingredients often achieve a flavorful mix of sweet and savory, they also add unnecessary calories to the sauce.

To achieve the taste that most people have come to love, without adding a lot more calories and sugar, we’ve swapped out the table sugar and pineapple juice for stevia.

With this simple switch we’ve reduced some of calories and sugar but have been able to maintain the sweet and savory taste that many people love. See the full recipe below.

Chicken Teriyaki Sauce Recipe

Nutritional Information per serving (one chicken breast): Calories 320, Total Fat 14 grams, Total Carbohydrate 18 grams which includes Total Sugars 9 g (8 g from added sugar/honey), and Protein 32 grams

Ingredients

  • 1 cup soy sauce
  • 10 packets of stevia tabletop
  • 2 tablespoon honey
  • 6 cloves garlic, whole
  • 2 tablespoons grated fresh ginger
  • 4 skinless, boneless chicken breast
  • 2 tablespoons cornstarch
  • 3 tablespoon cooking oil (preferably olive oil)

Instructions

  1. In a small saucepan, combine soy sauce, stevia, honey, garlic and ginger
  2. Bring to boil over high heat for about 3 minutes
  3. Remove garlic and ginger pieces
  4. Dissolve cornstarch in 2 tablespoons of cool water to make a slurry.
  5. Add cornstarch slurry into the boiling sauce and stir until sauce is thick and velvety
  6. Remove from heat and let cool
  7. Preheat a large non-stick pan, when pan is hot add olive oil and place chicken into pan and cook thoroughly
  8. When chicken is almost completely cooked through, baste chicken with sauce. Cook chicken with sauce until sauce fully coats chicken
  9. Remove chicken from pan and allow chicken to rest before slicing
  10. Serve with steamed vegetables and rice
