BLUE CHOC-A- SAURUS ICE CREAM


This no-churn blue vanilla ice cream with chocolate wafer candy and fudge swirls was inspired by my son's favorite childhood ice cream stand flavor. 

         

Hi friends! I'm back from Arizona. I had such a great time visiting my family. It was much needed quality time with them. And the weather was heavenly! It was sunny, dry, and comfortable with the temps in the high 70's and 80's. My middle sister, who lives in up in the mountains of Colorado where it is still snowing at the end of May, couldn't get over the beautiful weather. Every single time we stepped outside the words "it's so nice out" automatically flew out of our mouths. 


I like to think that I brought back the nice weather, as my first day back in Massachusetts was sunny and warm. And when warm weather arrives, I think of Ice Cream.

My family's favorite ice Cream stand is a local family owned business that had a location literally less than a 10-minute walk from my house. This location closed about 4 years ago. Luckily for us, there is another about 10-minutes drive away. They offer 75 flavors of ice cream and frozen yogurt. 75!!!!





The stand is opened seasonally, so my family looks forward to our summer pilgrimages to the land where the most delicious ice cream lives. One of the house signature offering is the Nor'Easter, which consists of 6 scoops of ice cream, 5 toppings, a banana, whipped cream, and walnuts. I am proud to say that yours truly participated in what my family calls the Nor'Easter Challenge one time and succeeded without dying on the spot. (Checked it off my bucket list!) Not only did I succeed, I also went out for dinner four hours later. But, truth be told, I wasn't feeling very well at dinner. Not doing that again...too much too soon!!



Today's post was inspired by my son's favorite flavor from the stand. He loved it ever since he was a little boy. It is comprised of blue vanilla ice cream with chocolaty crispies and fudge swirls. I believe the chocolaty crispies are actually Nestle Crunch candy. I call my recreation Blue Choc-A-Saurus and it differs from the original in that it is no-churn and contains Kit Kat. The only reason for the change up in candy is the lack of availability of Nestle Crunch candy bars. I can only find it sold in variety packs and not as a standalone unit. Kit Kat has similar components and is much more accessible to me. I want all the ingredients for this ice cream to be easily accessible. Kit Kat, while delicious in this ice cream, does not retain the crunch as well as the aforementioned. If you have easy access to Nestle Crunch or would like to order it online, I say go for it!

Please excuse the puddle of ice cream in the photos. In my haste to conduct the photo shoot prior to leaving for vacation, I used ice cream that was not completely set. As a result, it melted very quickly despite all my efforts to keep everything ice cold. Anywho, I hope you like how it looks enough to want to eat the entire bowl!

    BLUE CHO-A-SAURUS ICE 
    CREAM 
    Inspired by Meola's Ice Cream



    INGREDIENTS:

    2 cups cup heavy cream
    1 (14 ounce) can sweetened condensed milk
    1 1/2 tablespoon vanilla extract
    blue food coloring (I use1/4 teaspoon sky blue icing color)
    8 snack size Kit Kat bars (about 4 ounces), chopped
    1/3 cup hot fudge
    1/16 tsp. salt



    INSTRUCTIONS:

    Add sweetened condensed milk, vanilla extract, and salt to a large bowl and thoroughly combine. Set aside.

    Add food coloring to the heavy cream in a large mixing bowl. Using an electric beater on low and gradually increase to med high, beat just until stiff peaks form, about 2 minutes. Add 1/3 of the whipped cream to the condensed milk mixture and gently fold. Continue adding and folding the whipped cream, 1/3 at a time.

    Microwave the hot fudge for a few seconds, if needed, to obtain to a spreadable consistency. Place 1/3 of the ice cream mixture into a freezer safe container. Drizzle with 1/3 of the hot fudge. Add 1/3 of the chopped chocolate. Continue layer two more times.

    Freeze at least 8 hours, best overnight.

    Makes 12 servings.
