What I Eat In A Day Vol. 1

What I Eat In A Day will be a way for me to give you a little behind the scenes into my typical routine and lifestyle. I have been wanting to share this for awhile but always put it off – now that we are all moved into our new home and are settling in, I’m ready to take the plunge and not only start sharing more about my life but also create videos for YouTube. I hope that by sharing how approachable my recipes are, you will feel more confident in the kitchen and we can all share our experiences. Hopefully, in the next few weeks, I can get my first video up to accompany this post.


The main reason I waited this long to post what I eat in a day is that if you follow my blog closely then you pretty much already know! I’m a total creature of habit and I share everything I eat on here, Instagram posts, or Instagram stories. Another huge reason is that I’m not a doctor or dietician, so what I make my Husband and I eat is just really what we prefer and works best for us. Keep that in mind and chat with your doctor before switching up your diet. If you’re new to my blog, both my husband and I are lactose intolerant so we both cut dairy out. From time to time, I will try goat cheese and he will try “regular” cheese but it never ends well for me. Eggs also don’t agree with me, so I have cut those out completely too. Scrambled, baked, I want no part in dairy or eggs!

One more thing to add is that over the past few years I’ve cut way back on my meat and seafood intake. I’ve never been a huge meat or seafood eater, mostly just chicken, ground beef tacos, burgers, tilapia, etc. Recently though I’ve been listening to my body more and I feel so much better when I eat plant-based meals. I’m so lucky that my carnivore of a husband is on board with making veggies the star of most of my recipes! Maybe I should have waited a few more weeks to finally publish this post because I will be getting a full food and environmental allergy test done at the beginning of July! Is it weird that I’m super excited about this? I’ll for sure share my results if y’all are interested.

Breakfast

My morning always starts off with me sipping on two cups of black tea. I typically begin my day by checking my emails, thinking about what I need to accomplish that day, and maybe sneaking in 30 minutes of The Today Show.

  • Protein bar if I’m lazy or in a rush
  • Avocado toast or peanut butter toast with sliced banana, chia seeds, and cinnamon if I’m feeling a little extra
  • Tofu scramble if I really want to treat myself
  • Pancakes on the weekend if I’m feeling it

Lunch

I am not one of those people who can just snack for Lunch. I need a hearty and tasty meal to keep full until dinnertime. I’m all about simple recipes for lunch because 1) ain’t nobody got time for that and 2) I want my recipes to be accessible enough for those who need to meal prep and pack a lunch for work. Around lunchtime I typically have another cup of tea, either green or herbal – sometimes black if I need it. We drink tea a lot around here!

  • Quinoa bowl with roasted veggies and greens
  • Pasta salad loaded with veggies and a light dressing
  • Veggie wrap if I’m tired of bowls, salads, and pasta
  • Yogurt with granola and a banana if I’m in a rush
  • My husband will typically either eat what I make or make himself a quick smoothie

Dinner

This is where I really experiment! My husband and I are always trying something new. While I’m not vegan, I love cooking plant-based meals. My husband is a total carnivore but isn’t completely opposed to a veggie-focused diet. He is totally against “fake” cheese and meat though! When he travels for work, that’s when I bust out *ALL* the vegan queso, mac n cheese, alfredo pasta, dairy-free Mexican casserole… I think you get the idea haha! If you want to know what we eat for dinner, just browse through my blog because I’m not kidding when I say, I literally document all of our dinner recipes. A lot of tacos with homemade tortillas, homemade pizza dough with different sauces and toppings, falafel with hummus and homemade pita bread, and rice bowls.

Snacks

I love snacking, it’s a problem! That’s why I don’t keep many chips or pretzels around the house. Sometimes when I’m feeling like I need something but I’m not necessarily hungry, I’ll make myself a cup of green or herbal tea. When I do need a true snack, these are some of my favorites.

  • Spinach hummus with veggies or pita bread
  • Veggie Straws
  • Granola bars
  • Kombucha if I have some around the house

Dessert

Oh yeah, couldn’t forget this part of the day! I have a total sweet tooth and love finishing the night off with a little treat. I try to keep my portions small since this will be the last thing I eat before bed. I also have at least one cup of peppermint tea to soothe my tummy before bed.

  • Dark chocolate or dairy-free/vegan chocolate
  • Wine
  • Banana bread
  • Cookies

This year I’m really hoping to expand my breakfast and snack recipes. Of course, I want to add more lunch, dinner, and dessert recipes but those come easier for me. I struggle with coming up with something quick and easy for the early hours of the morning or when you just need something little to munch on.

Once I get my allergy testing done and results from my other doctors come in, I’ll probably adjust my diet a bit but here’s a look at what has been working for me.
