Fab Frugal Monday Meals – Week #13 by Leah Goldglantz

Message from Leah:

My favorite affordable meal is my tuna avocado boats. They require only 3 simple ingredients and make a delicious and easy gluten free lunch. This meal is packed with protein and healthy fat, too!

Ingredients:

• 1 ripe avocado
• 1 can tuna in water
• 1 tbsp mayonnaise (I prefer to use avocado-based mayo, but you could also use plain greek yogurt.)
• 1 tbsp fresh cilantro (optional)

Directions:

1. Mix 1 can of tuna fish with the avocado oil mayonnaise.
2. Slice the avocado in half lengthwise and remove the pit.
3. Spoon the tuna salad into the avocado ‘cups’ and garnish with fresh cilantro (optional). Enjoy!

Serves 1
