If you can’t take the heat, I WILL!

What I’ve learned in the almost 10 years living in Portland is that Oregonians have a perfect temperature range of 75-85 degrees.  For a city that is covered by clouds and rain for 9 months out the year, this small margin of comfort baffles me. Me, I’m an Arizona girl through and through.  My comfort temp begins at 75, if sunny, and goes right through the 100s.  Put me next to a body of water, and I’ll enjoy 115 degrees any day.  So, when work brought me back to Phoenix in June I packed my shortest running shorts, light-weight dresses, and eagerly hopped on a plane. 

It’s clear by the limited number of flights available that Phoenix is not the most sought after destination in June.  I had only one option for a direct flight, which had me traveling during the busiest part of the work day, a blessing and a curse.  I got to my mom’s house, where I stay when I’m in Arizona, around 1:30.  I responded to a few emails, returned a few calls and immediately laced up my running shoes.  I couldn’t wait to run under the hot sun, but even I, with my boasting confidence, was humbled by the toll the heat took on my endurance.  

Once recovered from my run, my mom and I headed out to try an Aerial Fitness place called Tough Lotus.  My mom had purchased a Groupon and asked if I wanted to go.  Do I?!  I’ve been eager to try the aerial fitness trend, and it didn’t disappoint.  For my Arizona readers, you can still purchase the Groupon here.

We started with an intro class followed by Aerial Ballet.  Three days later, as I write this, my mom and I still crying about our sore calves!  

Tough Lotus doesn’t only offer aerial classes.  They are first to offer the Bungee Workout. I wasn’t able to try the class on this visit, but I can’t wait to come back.  The Bungee Workout promises to provide high cardio and muscle toning.  My two favorite things in a workout!

After a couple hours of bending, swinging, jumping and plié-ing, Mom and I were ready to eat.  Luckily, I had already done a quick meal prep using this to make zucchini noodles. 

TIP: Prep your zoodles, sprinkle with salt, and layer them between sheets of paper towel. Let the zoodles sit for at least an hour.   This will help drain the water from the zucchini and keep your final dish from being too runny.  

I’m not going to pretend I came back to mom’s house and cooked a homemade healthy meal from scratch.  In fact, with the exception of the zoodles, I didn’t make anything from scratch, but sometime healthy has be done in a pinch, i.e. traveling and/or in someone else’s kitchen.  Here was my grocery list:

  • 3 large Zucchinis
  • 1 24oz jar Vodka Pasta Sauce
  • Parmesan Cheese
  • Bag of Dole Endless Summer Salad Kit
  • Joel Gott Pinot Gris (optional)

Ten minutes after we were home, Voilà!

And, that was our night.  There may have been another bottle of wine to follow that I will neither confirm nor deny.
