Haunted by Harry's trip to Saint Augustine and the longing for seafoood.

Hi everybody!  I know...I know...It's been a very long time.  I apologize for that. I did miss blogging.  I don't plan on waiting so long to blog again, I never did.  I got caught up in "life" and time slipped through my fingers.  I have been cooking though and have some nice recipes to share.

I've embraced the "single" life and love the fact that I can do as I wish and don't have to compromise or explain my actions.  Sounds selfish I guess, but I am happy to be on my own.

After a long while of just working and coming home day after day, I got to feeling like a robot, can that happen?  I think so, I wanted to break out of the routine and take the kids somewhere.  We decided on Saint Augustine.  As I packed, visions of a seafood combo danced in my head...
I pictured myself sitting by the beach, eating my seafood combo.  Ahhh, I could almost taste it.

We went to Saint Augustine beach where the commonly talked about white sands live.  It was wonderful, although it wasn't a very sunny day.  In the evening we went on a "Ghost Tour" where the group was alerted of ghost sightings at a nearby "old jail" , museum and restaurant.  "Some claimed to have seen the shadow or experienced the presence of  Catalina in the upstairs women's room of  Harry's restaurant" our tour guide said.  Harry's restaurant was Catarina's home once.

I was so excited when I heard this for two reasons:  I may experience the ghost of Catalina and best of all I may experience some good seafood.   I looked up Harry's and saw that they had seafood combo's, what?

The next evening, after looking for a parking spot forever, we finally made it in to Harry's.  The inside still looked like an old home, it was cozy.  I excitedly ordered my seafood combo, but was immediately disappointed when the waitress said the only fish they offered was catfish...I was trying to keep hope alive and simply ordered a shrimp and scallop combo.  I really wanted fish with that, but am not familiar with catfish and don't want to be.

Okay so, I wasn't going to get fish but YAY!  I was still getting seafood right?  As the waitress placed everyone's plate in front  of them I was in awe...they all looked so good and colorful and yummy.  When mine came, I squinted my eyes and brought my head in closer to try and find the seafood.  I immediately saw the fanned out French fries, but where were the scallops and shrimp?  I like to share my food and appreciate abundance on my plate for that reason oh and also because I like to eat.  So I take my fork and seek out the scallops, they were literally the size of a dime, ;yea....and the shrimp not much bigger.  Oh and I can't even remember how many of them there were, but I do know it wasn't much because it was all gone within a few minutes.  \

I felt my face frown, don't you hate that when you can feel your expression change in a bad way.
When the waitress returned, she made the mistake of asking if everything was okay.  I told her I didn't think so, where was the seafood?  She couldn't answer me , she snickered and walked off, really?  Fine, I figured we couldn't leave without the visiting the site where Catalina dwells at times, so...we went to the women's room.  No sighting there or anywhere.  As we walked out of Harry's I tried to look happy, satisfied, but inside I was a mess.  How could they do that to me?  All I could think about the whole way back to the hotel and beyond was my inability to share with my daughter, due to the lack of food.  In the end, although I saw no sightings of any ghost, apparition, entities nor shadows, I was haunted...haunted by the memory of the scarcity of seafood on my plate.

I had to do something, I had to banish the ghostly memory from my head.  The only way I could do that was by creating what I believe to be a seafood combo.  Below find the recipe for the batter and seafood needed to recreate my vision.  Now, it doesn't have to be the seafood I used, you can use what you like.

Seafood Combo Batter

2 cups of flour
2 tablespoons of onion powder
2 tablespoons of garlic powder
1 1/2 cup of milk
2 tablespoons of baking powder
4 cups of oil
12 ;medium shrimp
6 large scallops
2 whiting fillets cut in half
French fries
lemon wedges
tartar sauce

Put oil to heat.  Mix flour, milk, garlic powder, onion powder, baking powder together.  You should get a thick batter as in the photo below.  Dip the fish in the batter and place in very hot oil.  Cook until golden brown  Remove to a plate covered with paper towel.  Next dip and cook scallops and then shrimp.  If you want a cone like I did, just get a page from the newspaper and with the ball of your hand roll it upward from bottom edge to top and secure it.  I placed some French fries inside then some fish, scallops and shrimp.  Get some lemon wedges in there and don't forget tartar sauce.  I really enjoyed this seafood combo, it just goes to show you that sometimes when you want something done right you have to do it yourself!

Enjoy everyone!
