Cornbread

1/2 C Butter + some for greasing pan
1/2 C sugar
2 eggs
1 C buttermilk (or 2 Tbsp vinegar + enough regular milk to fill measuring cup to 1 C line)
1 C cornmeal
1 C unbleached white whole wheat flour
1/2 tsp baking soda
1/2 tsp salt


Preheat oven to 375 degrees. Generously butter an 8 x 8 pan and dust with cornmeal, tapping out excess.

Melt butter in large bowl, then stir in sugar. Add eggs and beat until well blended, then stir in milk. Sift in cornmeal, flour, baking soda, and salt; mix just until moistened.

Pour batter into the prepared pan and bake for 30 minutes.

Great with chili ... and great for breakfast the next day with some eggs and bacon!
