GLUTEN FREE COCONUT CAKE

Gluten Free Coconut Cake is very simple and easy recipe and it is perfect for those on low sugar, gluten free, health diet plan. This cake is super moist with full of coconut flavour.



Ingredients:

  • Butter - 1/2 cup 
  • Caster sugar - 1/2 cup 
  • Vanilla essence - 1/2 teaspoon
  • Eggs - 2
  • Rice flour - 120 gms
  • Baking powder - 1/2 teaspoon
  • Dessicated coconut - 1/2 cup (50grams)
Method:
  • Preheat oven to 160 degree C and grease a round cake tin with parchment paper.
  • Cream butter, sugar and vanilla essence for 2 minutes. 
  • Add eggs and beat well 
  • Fold the flour, baking powder and coconut and beat for another minute.
  • Scrape the mixture to the greased cake tin and bake for 40 minutes. 
  • Cool the cake and add cream cheese frosting if required.
