Keto Waffles

Ingredients

2 cups ground flaxseed
1 Tbs gluten-free baking powder
5 large eggs
1 cup water
1/3 cup coconut oil, melted (or olive oil)
1 Tbs fresh herbs (basil, parsley, cilantro, sage..)
table salt

Instructions

  1. Clean and preheat your waffle maker on medium.
  2. In a bowl, combine flax seed with baking powder and salt; whisk well and set aside.
  3. With the help of your electric mixer, beat eggs, coconut oil, and water until firm (about 30sec).
  4. Combine egg mixture with the flaxseed mixture and stir well.
  5. Allow resting for five minutes.
  6. Add the fresh herbs in a mixture and stir.
  7. Divide mixture into 4 servings.
  8. Scoop each onto (preheated) waffle maker and close the top. Cook until it beeps.
  9. Serve hot.
