Ingredients
2 cups ground flaxseed
1 Tbs gluten-free baking powder
5 large eggs
1 cup water
1/3 cup coconut oil, melted (or olive oil)
1 Tbs fresh herbs (basil, parsley, cilantro, sage..)
table salt
Instructions
- Clean and preheat your waffle maker on medium.
- In a bowl, combine flax seed with baking powder and salt; whisk well and set aside.
- With the help of your electric mixer, beat eggs, coconut oil, and water until firm (about 30sec).
- Combine egg mixture with the flaxseed mixture and stir well.
- Allow resting for five minutes.
- Add the fresh herbs in a mixture and stir.
- Divide mixture into 4 servings.
- Scoop each onto (preheated) waffle maker and close the top. Cook until it beeps.
- Serve hot.
