Ingredients
2 eggs
½ cup ground flax seed meal
¼ cup heavy cream
2 Tbsp butter, melted
3 Tbsp Cottage cheese
¼ tsp baking powder (gluten-free)
Coconut or olive oil for frying
Instructions
- In a deep bowl, mix all ingredients from the list together. Stir well.
- Heat the oil in a non-sticking frying skillet.
- Cook the pancakes for two minutes and flip when bubbles appear in the middle.
- Cook one minute more from the other side.
- Serve hot and enjoy.
