Wow.

That’s all I’ve been saying after my first bite of this delicious, simple – and did I mention, delicious? – one-pot meal.

Prep time is minimal and everything comes together in minutes. Start to finish is about twenty minutes. And that’s perfect when you’re starving and need to eat STAT – or need to get meal prep done because “Game of Thrones” is coming on soon.

And speaking of “Game of Thrones”…wow again.

I’m not going to give out any spoilers, but I think I experienced almost every emotion known to man – and dragon – after seeing Episode 7 of Season 7. My favorite emotions were the ones I felt during Jon Snow’s scenes. He’s so pretty. And it’s no coincidence that I’m talking about Jon Snow’s prettiness (aka hotness) in a recipe post about sausages.

It’s days later and I’m still reeling from that episode (and Ned Stark’s bastard’s face!). What are we all going to be like after the season finale tonight? I wish we could all sit around a table enjoying this amazing dish and recap the finale and exchange theories – both crazy and legit. We could enjoy our time with these Sausage, Peppers, & Onions and down them with some of Cersi’s favorite wine. Girlfriend likes to drink. She also likes her brother. Maybe a little too much. So much ewww.

Back to the recipe… I made it for my lunch last week and it truly is not a sad desk lunch. I love it so much I made it again for this week’s lunch. Because it comes together so quickly, it’s also perfect for dinner during the week. It’s quicker to put together, tastier, and healthier than getting take out.

I served it over cauliflower rice, which I sautéed in a little olive oil with a couple of pinches of salt and garlic powder. I’m sure it’s good over just about anything, like rice and spaghetti squash – which I hope to one day like. I really want to!

I found this recipe from one of my favorite blogs, Lexi’s Clean Kitchen. Lexi has really great recipes and her blog is so full of information beyond just food. I honestly haven’t tried any of her recipes that I don’t like. They’re all really tasty, healthy, and easy and fun to make. And her cookbook is fabulous!

I’ve followed Lexi’s Clean Kitchen for four years and as a blogger she is a huge inspiration to me. When I first started reading her blog she was working as a teacher and blogging was her hobby. Working full-time, I used to wonder, “How does she find the time?” I still wonder that, but discovered that if you love something and want to make it work, you MAKE it work. (Did you read that last part in a Tim Gunn voice too?) She took a leap of faith a couple of years ago and stopped teaching to devote to blogging full time. She’s super successful and continues to bring out great recipes and content. How can you not be inspired too?

Another reason why I love this recipe is that I was able to get all the ingredients from Trader Joe’s, also known as my version of Disney World. I used Trader Joe’s Hot Italian Chicken Sausage, but you can use any variety you’d like. Or mIx and match. So versatile!

To me, these Sausage, Peppers, & Onions are amazing, not only because they’re delicious and easy to make, but also because it’s the perfect storm of some of the things I love: one of my favorite blogs, Trader Joe’s, and “Game of Thrones”. GoT really has nothing to do with this recipe. I just wanted to have an excuse to bring up Jon Snow. So pretty…

Sausage, Peppers, & Onions

Ingredients

  • 1 Tablespoon extra virgin olive oil
  • 2 garlic cloves
  • 1 large onion
  • 3 peppers: red, yellow, orange, cut into strips
  • 4 spicy Italian chicken sausages (or any other flavored chicken sausages)
  • 1 15 oz. can diced tomatoes
  • ½ cup chicken broth
  • 1 teaspoon garlic powder
  • ½ teaspoon cumin

Instructions

  1. Heat extra-virgin olive oil in a 12-inch skillet over medium-high heat. When the oil is hot, add garlic and cook for 30 seconds or just until fragrant.
  2. Add sliced onions, peppers, and cook until the onion is translucent.
  3. Add cooked sausage cook for 1-2 minutes.
  4. Pour in diced tomatoes, chicken broth, and spices. Mix well.
  5. Bring to a boil then reduce heat and let simmer for 10 minutes.
  6. Taste and adjust spices as desired.
