I don’t know about you, but I am all about simple recipes during the school year. In between soccer practice and gymnastics, life tends to get a little bit chaotic. I jump at any opportunity to make dinnertime a breeze! That is why this 30-Minute Shrimp Taco Rice Skillet recipe has become a new family favorite. It’s hearty and delicious with minimal clean up – what’s not to love?

It starts with sautéed shrimp, an array of colorful vegetables, and your favorite long grain rice. Garnish with all of the taco toppings you love and you’ve got a well-balanced, 30-minute meal on the table. This dish is full of protein and carbohydrates, which makes this our go-to dinner after a long day.

30-Minute Shrimp Taco Rice Skillet

In the past, I’ve swapped out the shrimp for chicken and it was equally as delicious! It really depends on what type of protein I have on hand at the time. Sometimes I just use peppers, while other times I’ve added corn and black beans. That’s why I love this recipe, it’s so versatile. When my husband makes this 30-Minute Shrimp Taco Rice Skillet for himself, because he can finish an entire skillet, he adds lots of chilies and jalapeños!

30-Minute Shrimp Taco Rice Skillet

Total Time: 30 minutes

Ingredients

  • 1 tbsp garlic powder
  • 1 tbsp onion powder
  • 1 tbsp chili powder
  • 1 tbsp cumin
  • 1/2 tsp paprika
  • 2 tbsp olive oil
  • 14 oz shrimp
  • 1 c long grain rice
  • 1 small onion, diced
  • 1 small green pepper, diced
  • 1 can diced tomatoes
  • 2 cups chicken broth
  • 2 green onions, thinly sliced (optional)
  • Chopped cilantro (optional)

Instructions

  1. Start by combining the first five ingredients, then set aside.
  2. In a large skillet, heat olive oil over medium-high heat. Add the shrimp and diced onion, and sauté until fragrant. Add the taco seasoning until well combined.
  3. Next, add in uncooked rice, tomatoes and, chicken broth.
  4. Bring to a medium boil for about 5 minutes.
  5. Add the green pepper to the skillet and reduce heat to low. Simmer for about 15 minutes, or until rice is tender.
  6. Garnish with desired toppings and enjoy!

Not only do we eat a version of this meal for dinner almost weekly, but it makes for a yummy leftover lunch.
