Beef with Broccoli Recipe

Beef with Broccoli is a quick and easy dish that I cook for my family whenever I need to make a quick and delicious dinner. The ingredients are readily available in grocery stores, which makes it convenient. I use Beef tenderloin to save time. This is the tenderest cut of beef that cooks in a few minutes. This dish is best eaten with white rice. It can also be topped over stir-fried noodles.

This recipe is a keeper. Try to make one at home instead of ordering from a Chinese restaurant. Home cooked meals are better after all.

How to Cook Beef with Broccoli Stir Fry

Start by making the Marinade. Combine soy sauce, oyster sauce, sesame oil, cooking wine, sugar, and cornstarch in a bowl. Stir using a teaspoon. Marinate the beef in the mixture for at least 10 minutes. The combination of ingredients in the marinade results in a tasty stir fried beef.

Cooking stir fry is a quick and easy process. Proceed by stir-frying the broccoli while the meat marinates. Do this by heating a couple of tablespoons of oil in a pan. Sauté the ginger and garlic and then add the broccoli. Note that garlic is an optional ingredient. You may or may not use it. Two minutes is enough time enough time to cook the broccoli. Transfer everything to a clear bowl or plate. Set it aside for now.

The next step is to stir-fry the marinated beef. Drain the marinade and set it aside. Heat the remaining oil in a pan or a large skillet. Stir-fry the beef until it browns. Add the broccoli and pour the remaining marinade. Cook until sauce thickens.

How to reduce oil splatter

Stir-frying marinated beef can cause oil to splatter quickly. Splattering can be reduced by completely draining the marinade from the beef. This can be done by using a colander or wire mesh. Make sure to put a bowl below to catch the marinade because this is needed in the recipe.

How to make the beef tastier

The marinade is responsible for the overall flavor of the dish. I recommend marinating the beef for at least 10 minutes. Do it longer to make the beef tastier because the meat can absorb the flavors better with time.

Alternative Ingredients

Soy sauce and sugar are the basic ingredients for the marinade. Dark or light soy sauce can be used. Either white or dark brown sugar works for the recipe.
I recommend adding Shaoxing wine for best results. Dry sherry can be used as a substitute.

I do not recommend the use of hoisin sauce for the recipe. This is the equivalent of barbecue sauce in Asian cooking. Beef with broccoli should taste more like a teriyaki, not BBQ.

Top sirloin, hanger steak, and flat iron steak are good tender cuts of beef. Make sure to slice these thinly so that it will cook and tenderize quicker.

Ingredients
  • ½ lb. Beef tenderloin, sliced thinly
  • 2 cups broccoli florets
  • 4 tablespoons cooking oil
  • 4 cloves garlic, chopped
  • 1 thumb ginger, minced
Marinade ingredients
  • 3 tablespoons soy sauce
  • ¼ cup Shaoxing cooking wine
  • 1 teaspoon Sesame oil
  • 2 tablespoons oyster sauce
  • 1 teaspoon granulated white sugar
  • 1 tablespoon cornstarch
Instructions
  1. Combine marinade ingredients in a bowl. Mix well.
  2. Pour marinade over the beef slices. Marinate for 10 minutes.
  3. Heat half of the oil in a pan. garlic and ginger.
  4. Add broccoli florets. Stir fry for 2 minutes. Remove the broccoli from the pan. Set aside.
  5. Pour remaining oil. Drain remaining marinade and place in a bowl. Set aside.
  6. Stir-fry marinated beef until brown.
  7. Add stir-fried broccoli and pour the marinade. Continue to stir-fry until the sauce thickens.
  8. Transfer to a serving plate. Serve.
