we’re slowly approaching the home run to christmas, only 10 more days. if you still want to bake some cookies or your first batch has been eaten up and you desperately need a fresh supply, these simple Chocolate Walnut Cookies are the perfect choice for you. knead the dough and cut the cookies from a roll – done!
ingredients (about 60 pieces)
- 100 g walnuts
- 100 g chocolate
- 110 g cold butter, in pieces
- 150 g brown suga
- salt
- 1 egg
- 180 g flour
roughly chop walnuts and chocolate.
with the dough hook of the handheld mixer knead butter, sugar, 2 pinches of salt and egg. add flour and quickly knead into a smooth dough (start with the mixer, finish with your hands). knead in walnuts and chocolate. or: put all ingredients into a food processor and let it do the work.
on a worktop covered with flour form dough into 4 rolls (each about 2,5 cm), cover with cling wrap and place in fridge for 2 hours.
preheat oven to 180°.
with a heavy, sharp knife cut into 1 cm slices. place on baking trays lined with baking paper.
bake one after another in hot oven for 13 – 15 min and let cool down. store eg in a tin box.
