brownie bites

before christmas season starts in earnest, you get one more Brownie recipe. for my usual brownies i rely on my standard recipe, because it is just so moist and just how i like it. but for variations some other ideas are allowed and you can find a few on the blog already. usually i don’t bake with sweets (why not?), but it as a grandiose idea. i’ve like toffifee every since i was little and although i don’t eat giotto that often, they are still pretty good. topping off one of these small brownies they just make my day. the mini muffins disappear in one Bite in your mouth – it could be that one has to devour more than one. since they are so small and handy, they are perfect for bringing them to a (pre) xmas party or just to the office, much to the delight of your co-workers. rightly anticipating, i made a double batch. astoundingly they didn’t eat all of them, but the colleagues in our main office couldn’t resist the next day

ingredients (24 pieces)

  • 100 g chocolate (whatever you prefer dark or milk)
  • 80 g butter
  • 150 g flour
  • 1/2 teaspoon baking powder
  • 2 eggs
  • 100 g brown sugar
  • salt
  • 4 tbsp milk
  • 12 toffifee (or 24, depending what you like best, my co-workes definitely preferred these)
  • 12 giotto

place paper forms in a mini muffin tray. preheat oven to 180°.

break Chocolate into pieces. melt with butter over a bain marie (make sure the mixture doesn’t get too hot)

mix flour, baking powder and cocoa. beat eggs, sugar and a pinch of salt until creamy (either with a kitchen machine or handhelf mixer). mix in cooled down liquid butter chocolate mixture and milk. fold in flour mixture, but don’t stir too long.

fill muffin molds up to 2/3 with dough. if there is still some dough left, but not enough to justify an extra baking round, fill dough into a (normal sized) single muffin form and bake a bit longer. bake in hot oven for 6-8 min – it’s alright if the bites are still a bit liquid in the middle, they firm up cooling down. take out of oven and immedietly softly press either 1 toffifee or giotto in the middle of each bite. carefully remove from form and let cool down on a cooling rack. store in a cool place.
