plum chocolate crumble muffins

of course one has to bake with the amazing summer fruits. to me it seems like i haven’t tried anything new in a while. since i still had quite some plums at home from making dumplings, it had to be something with these sweet, violet fruits. i’ve been tempted by this recipe for plum Chocolate Crumble Muffins for a bit now, so there wasn’t really much to ponder (i saw it in one of my many cooking magazines). perfect also that you don’t need any kitchen machines only a wooden spoon. i think it has something quite calming making everything using your own hands.

the first bite of the muffin just sent me over the moon. Chocolate with nuts, plums and crunchy crumbles with a hint of cinnamon – i could have eaten them all straight away.

ingredients (12 muffins)

  • 250 g plums
  • 140 g butter
  • 50 g pecans (i prefer them, since they definitely won’t be bitter, but you can also use walnuts)
  • 80 g chocolate (as usual a mixture of milk and light bitter)
  • 300 g flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soad
  • 1 pinch of salt
  • 25 g cocoa powder
  • 1 egg
  • 210 g granulated sugar
  • 250 ml buttermilk
  • 1 teaspoon ground cinnamon

cut plums in half, remove pit and cut into thin slices.

preheat oven to 180°. line a muffintin with paper forms.

melt 100 g and 40 g butter separately and cool down until lukewarm. coarsly chop nuts and chocolate. mix 250 g flour, baking powder, baking soda, cocoa, nuts, chocolate and salt. slightly whisk 100 g melted butter with egg, 160 sugar and buttermilk. with a wooden spoon fold into the flour mixture (only until everything is wet, don’t over stir).

knead the remaining butter with 50 g flour, 50 sugar and cinnamon into crumbles. i used a little spoon, since it is, contrary to “normal” crumbles, a quick sticky mixture, but easy to work with.

distribute the chocolate dough into the muffin molds, place plum slices on top and cover with crumbles. bake on middle rack for about 25 min.

remove from oven, let cool down 10 min in muffin tin. remove from form and let cool down completely on a cooling rack.
