The recipe is as follows:
Uncle Siggy’s Pancakes
2 cups sifted all purpose flour
½ cup sugar
4 ½ teaspoons baking powder
1 teaspoon salt
2 eggs
2 cups milk
¼ cup (1/2 stick) butter
Sift Dry Ingredients into large bowl. Melt butter in microwave in medium bowl. Beat eggs into butter
and add milk. Gradually stir liquid into dry ingredients until blended. A few small lumps are ok.
Using a large spoon (like an ice cream spoon), place spoonfuls on griddle heated to 350°. When bubbles
form on top, turn pancake and continue cooking until browned.
Serve with syrup, butter or berries as desired.
