We have been enjoying the fresh Summer vegetables and the Belgioioso fresh mozzarella and here is another variation on that theme.

This time some of our frozen rotisserie chicken was added along with some fresh herbs and then served on top of Costco romaine lettuce.

This was a tasty, bright and satisfying summer dish that came together in minutes.  This is definitely going to be made again and it certainly had a great payback reward in terms of the time and money spent on it.
