Italian Garden Salad

Salads make a great summer meal or side dish. They are easy to prepare and don’t require any cooking, meaning that you won’t heat the kitchen up. Salads usually consist of lettuce and any vegetables that you want. For this Salad, lettuce is used as the base along with cherry tomatoes, sliced onion and green bell pepper. Both black olives and green olives are added also. A homemade Italian olive oil salad dressing is made along with the salad to drizzle it on top. This salad tastes great as a light lunch or as a side dish to go along with any main dish.

None of the ingredients need to be cooked ahead of time, just chop all of the ingredients and toss them together in a large bowl. The salad can then be refrigerated until you are ready to serve. For the Italian olive oil dressing, in a small bowl, whisk together olive oil, red wine vinegar and Italian seasoning. Store the dressing in an air tight container or jar. Serve the dressing over each individual salad. This is a great make ahead dish that can be served at barbecues or picnics. And it is gluten-free making it perfect for all diets.

Italian Garden Salad

  • 1 large head lettuce, chopped
  • 1 pint cherry tomatoes, halved
  • 1 large onion, sliced
  • 1 large green bell pepper, sliced
  • 1 ( 6 oz.) can black olives, sliced
  • 1 ( 6 oz.) can green olives, sliced
  • 4 tablespoons olive oil
  • 2 tablespoons red wine vinegar
  • 1 teaspoon Italian seasoning
  1. Chop lettuce and place it into a large bowl, add halved tomatoes, sliced onion, pepper, and both olives. Toss together.

  2. In a small bowl, whisk together olive oil, vinegar and Italian seasoning. Drizzle dressing over each individual salad.
