What are tomatillos?
Tomatillos (literal translation is “little tomato”) are a small, tart green tomato covered in a thin green paper-like husk. They were initially domesticated by the Aztecs in 800 B.C. Make sure you thoroughly remove the husk and rinse, rinse, rinse! The husk can be leave a bit of a sticky residues that you don’t want in your mango tomatillo salsa.
Serve this salsa fresh within 3 days. Pair it with fish tacos or chips. Did I mention it’s vegan too?
Pro Tips
- Fresh is best. Tomatillos lose their texture when frozen or canned.
- Again, fresh is best. Don’t use canned mangoes, jalepeños, or tomatillos for this dish.
- Don’t feel limited by chips. Drizzle on fish tacos, grilled chicken or pork.

Mango Tomatillo Salsa
Try this mango tomatillo salsa, an utterly delicious sweet savory salsa to kick your picnic up a notch or two. This is super east to make too, just blend all the ingredients!
- 5 tomatillos (roughly chopped)
- 1 mango (ripe, diced)
- 1/2 tsp Kosher salt
- 1 jalapeno (large: cored, seeded and diced)
- 1/4 cup cilantro (chopped)
- pinch cinnamon
- Place all ingredients in a food chopper or food processor until thoroughly blended.
- Serve with your favorite chips.
