The recipe for Keto-Friendly Low-Carb Peanut Butter Mousse

Our Keto-Friendly Low-Carb Peanut Butter Mousse will make peanut lover’s dreams come true! With peanut butter goodness combined with clouds of whipped cream, this dessert elevates peanut butter to a whole new level! It’s perfect by itself, or, for a more Reeses cup experience, sprinkle some chocolate bits on top or drizzle on a bit of low-carb chocolate syrup. 

This recipe takes less than ten minutes to whip up, and, if you already eat low-carb, you probably already have the ingredients in your kitchen. 

 

The inspiration

My inspiration for this reader actually came from a reader comment on my recipe for peanut butter pie. This reader wanted to know the nutritional for the peanut butter pie filling.

Obviously, this person was planning to eat the filling with a spoon and not bother with the rest of the pie. I liked how she was thinking!

I decided I wanted this mousse to be just a bit fluffier than the peanut butter pie filling, so I added some extra whipped cream. This makes it a perfect peanut butter cloud.

 

Tips and tricks

For the most fluffy texture, serve this Keto-Friendly Low-Carb Peanut Butter Mousse immediately after making. It’s more like a peanut butter whip and super creamy before refrigerating. 

Refrigerating it for several hours will give it a more mousse-like consistency. 

To make a peanut butter no-churn ice cream, just spoon the mousse into individual freezer-safe containers and freeze. It’s important to use serving sized containers because it will be hard to scoop out after it’s frozen.

After freezing, let it sit at room temperature for about 10-15 minutes to let it soften, then it can be eaten like a no-churn ice-cream. 

Feel free to stir in a few low-carb chocolate chips or top with a low-carb chocolate syrup or fudge sauce. This combination is perfect for that  Reeses Cup craving!

This Keto-Friendly Low-Carb Peanut Butter Mousse recipe makes a dessert that peanut butter fanatics will remember! This creamy, peanut butter goodness can be part of a low-carb, keto, Atkins, gluten-free, grain-free, or Banting diet.

For the peanut butter mixture:

  • 1/2 cup granulated stevia/erythritol blend ((Pyure)(or 1 cup powdered Swerve))
  • 2 tablespoons heavy whipping cream
  • 2 teaspoons vanilla extract
  • 8 ounces cream cheese ((room temperature))
  • 3/4 cup peanut butter

For the whipping cream:

  • 1 cup heavy whipping cream
  • 1 tablespoon granulated stevia/erythritol blend ((Pyure))
  • 1 teaspoon vanilla extract

For the peanut butter mixture:

  1. (Skip if using powdered Swerve). Process Pyure in a food processor until it has a powdery consistency. Transfer to a large bowl.

  2. Add 2 tablespoons heavy whipping cream and 2 teaspoons vanilla extract to the sweetener. Blend together using a mixer.

  3. Add the cream cheese and the peanut butter to the sweetener mixture.

  4.  Blend on low speed until combined, then beat on high speed until mixture becomes fluffy. Clean beaters before continuing to the next step.

For the whipping cream:

  1. In a separate medium mixing bowl, combine one tablespoon sweetener with the cup of heavy whipping cream. Beat on high speed using a hand mixer until soft peaks form. Add vanilla extract and beat until stiff peaks form.

To combine:

  1. Gently fold about 1/3 of the whipped cream into the peanut butter mixture to lighten. Fold in the rest of the whipped cream.

  2. Spoon into eight serving dishes and garnish as desired. I sprinkled a bit of dark chocolate on top in the photo.
